I would like to tell you that our family is one of those families that may lack meat in the house, but not coffee, because from an early age we learned to consume it, either on its own or adding milk.

My father was a person who drank a lot of coffee, and he was a coffee taster par excellence, which is why in my house we did not buy coffee from the supermarkets, he was in charge of buying the beans because he knew when the bean was at its peak, neither too green nor overripe.

In my mother's house, which had a very large patio, there was a kind of place to do some chores or hang out, it was a roofed space without walls of approximately 4 meters per side, well, in that place my father used to roast the coffee that was consumed during the week, that was his hobby and something that he always did on the weekends and he took his time for it.

Then came the grinding, that did not take long, and it was something that, if the brothers helped, but the roasting he did not leave it to anyone because he said that they could burn it, he was very jealous with the coffee, because he was a good coffee drinker and he liked it a little strong, because if not he said that it did not taste like anything.

All the neighbors in the neighborhood knew that when the aroma of coffee hit them on the weekends it was because my father was roasting it in the patio of the house; but definitely that coffee if it was pure with selected beans, that was an aroma that spread through a good part of the neighborhood.

I consider that I have never had better coffee than that, in spite of the fact that in the city where I live there is a municipal market where you can buy a type of freshly ground coffee, nevertheless, I consider that with everything and that it does not compare, because there is the factor of the type of bean, not all the beans have the same quality, and this should result in the quality of the coffee, of course.

That is why I have always said that there is nothing like the coffee that was drunk in my mother's house, that is why at the time of selecting one, always come those good and pleasant memories of having tasted one of the best, if not the best coffee.

What an interesting experience. We once had a plot of land near Nirgua and picked coffee. There was only one place where you could roast it with confidence, they knew how to get it just right.
