A Quail egg omelette just hit the spot, it's top shelf homestead food!
Found a little time to make an omelette from the quail eggs, with about 15 eggs. This is about a day and a half harvest of quail eggs. The strange thing here is the garden tomato slices on the side...in December! I have never had fresh garden tomatoes so late in the year, but they were delicious....

I sauteed some sliced chicken breast, then added and cooked the eggs. Cheese went in before I folded it over, and I cooked the cheese enough to melt it. The chopped onion and cracked pepper finished it. I add the onions last because I like their fresh flavor, but you could add them to the sliced chicken at the start. I did use seasoned salt on the eggs, and you can add baking powder if you want more fluffy eggs. If you add baking powder, use less salt.
Mushrooms are a good add too, but reduce the available cheese space, so it's a trade off. Add the goodies you want, and enjoy!
The reason these are good homestead supplies:
The hens lay at least one egg a day, and begin laying at 8 weeks. Meat birds are full sized at 6 weeks, so there is a good meat source in roosters. They pressure can well for long term storage.
This is a very good prepping supply, because in the winter you can keep a dozen or so; and quickly rebuild the flock in the spring!
An added advantage is that they are all dark meat, which is my favorite. You can also release a few to do the work of tick removal, but they run over 40 acres and won't stay right where you want them. Building up a local population will also give you a prepping source for extra protein!
Awesome a home made meal from home grown produce.
Trying to have more SHTF meals now, so I'm used to them while I have other options. Lets me know how planning meets real world, in case I need to tweak it some!
