My Quest For A S'More - part 1 (coconut flour graham crackers)

Hello, foodie friends! I have been having a craving for s'mores lately. If you are unfamiliar, s'mores are a sandwich of graham crackers, milk chocolate, and toasted marshmallow. You often will see people (in my case, when I was in scouts) eating these when they go camping, toasting marshmallows over a campfire.

But nowadays, I am allergic to half the world, which means regular graham crackers are out because of the whole wheat flour, and regular marshmallows are out because of the corn syrup! So what's a former scout to do? Well search the internet for alternative recipes, of course. ;)

I just tried my hand at coconut flour graham crackers, a recipe which I got from here: Janet's Delicious Low Carb Kitchen ...so I won't repost the recipe, as it's not mine. Go check it out there if you'd like to try these! :) Another day, I shall try my hand at making homemade marshmallows. :)

So the dough mixed up easily, and the recipe wants you to cool it in the fridge for 5 minutes after mixing it, which all went fine. But then I started having difficulties, lol.

The recipe expects you to be able to roll it out with a rolling pin and cut it into shapes ...which when I made whole wheat graham crackers in the past, is exactly what I did, but noooooooo that is not what happened this time. The dough was so sticky that it was impossible. And having never made the recipe before, I wasn't sure if I could dust it with more coconut flour the way you can do with bread if it is too sticky, or if that would mess it up (or even if coconut flour would act the same and make it less sticky at all). I tried a few times but all I was doing was making a mess of it. Eventually I gave up, and just scooped up a handful at a time, smooshed it in between my palms, and set it on the cookie sheet. LOL

Then I baked them per the instructions and they spread out even more:

So they did not look like the photos on the blog I got the recipe from, but they sure smelled good (mmm, cinnamon). Once they had cooled off, I tasted a piece and they taste good! Rather like if a graham cracker and a snickerdoodle cookie had a love child. So they should taste good in s'mores.

So if you're going to try this recipe, I would say skip the rolling pin and just wing it, lol. But maybe they'll be less sticky if you use a different sweetener? I used brown sugar, so that might be why. I even tried taking a piece of aluminum foil and peeling it off to get the shapes right, but that didn't work, either! But it doesn't matter, as long as they taste good, in my opinion. :)

It looks nice in the eyes but my question is why do you use brown sugar and did the brown sugar colour influence the colour of the output?

The recipe called for either brown sugar or monkfruit sweetener, which I don't have, so I used brown sugar. It does usually make things come out darker, yes - when I make chocolate chip cookies, I use all brown sugar there too and they look as though they are maybe burnt when they aren't, it's just the color from the sugar.

For sure, tag me! I'm curious to see how they work for you too. Maybe it also matters that I'm at altitude; that can effect baking as well.

Uh oh! Well, as long as they taste good, who cares! lol

Better luck next time... And homemade marshmallows?? THAT I have to see!
