Pi Day! Happy Pi Day

Pastry dough rolled out, carefully fit into a pie tin, crimping the edges along the rim or tin. Fill with whatever your heart desires. Savory or sweet, let's make a pie!


Some things in life are worth doing it again. The exactness of that feeling will never come again, but, the joy? Does it matter when the joy is still there? Baking with you is special, always has been. You lay out the ingredients in order of their need, your measuring spoons and bowls placed like a prepped surgical tray. I want to ruffle your hair, just so it can be out of place. Didn't we talk about nothing being perfect yesterday? Perfect is overrated.I digress.

Ingredients


1 cup Karo Light Corn Syrup
3 eggs
1 cup sugar
2 Tbsp butter, melted
1 1/2 cans pecans (16 oz)
1 unbaked pie crust, deep dish (or make your own)


Prep 5 minutes
Preheat Oven 350 F
Bake 60-70 Minutes


Directions


STIR the first 5 ingredients thoroughly using a spoon. Mix in Pecans
POUR into pie crust
BAKE on center rack of oven for 60-70 minutes.
COOL for 2 hours, the store I refrigerator
TIPS Pie is done when the center reaches 200 F. Tap center surface of pie
lightly, it should spring back when done. For easy cleanup, spray pie pan with
cooking spray. I cover edges of the crust so it doesn't over-brown, then take off the
last few minutes. You can also wait until it browns, but I think it overcooks that way.

And just like that, your pie is done. Quick and easy, no fuss. How do you make your pecan pie? This one is not fancy, but, it checks all the boxes. Life never tasted so good.

Speaking of favorite pies, nothing can replace the splendor of pizza pie, correct me if I am wrong. When I think of pie, my mind does right for the savory, leaving the sugar behind. I know I stand almost alone on this! Which do you prefer? Confess! :)

But that pie looks great and I am not even a fan of Pecan pies

I do agree perfect is a over rated, striving for perfection is good to do, but always havign new goals is more fun, if you did it perfect every times wouldn't life get so boring

And back to Pies, till I came here I never thought of Pizza as a Pie, I think here i would pick Pizza over a sweet pie any day of the week, mind you that said my favorite Pizza is Hawaiian so that is sweet I guess
I know for many here Pineapple on a Pizza is an insults to pizza lovers so I beg forgiveness in advance, after all I am a Tattooed thug from Down under what can you expect LOL

That said my Mum used to make the best Apple Pie and Apple Shortcake now either of those I would take as first choice :)

Apple pie rules! Of course, this pizza and pecan had to be made a spur of the moment before I had to leave, so I went with easy. Apple shortcake? Do you I have never had one of those! I may need to try looking for a recipe for that. Anything apple!

At home, we never even called it pizza, everyone just asked if you wanted a pie. Don't ask me how we knew the difference, but, I think we would ask if you wanted apple pie, because everyone KNEW what pie was. We knew, somehow, we knew. :))

Pineapple wasn't something that went on a pie, but, it has migrated and it happens to be one of my daughter's favorite, so whenever we are making pizza, we always have to make at least a half a Hawaiin Pie. No insult here!

We have hardly had pizza since being here as we didn’t really like the ones we bought here but tried one just the other day not far from our house and loved it

I know the recipe fir apple shortcake was in the Edmunds cook book we had from NZ but can’t check as it’s at Marks house

I fired mine, ever since she told me it was going to be 14 degrees the Saturday night. We haven't had that all year! Liar! Liar! Pants on fire... except, it was 14 degrees! And now it is 45 degrees, but, it is two hours later than when you responded. It is going to be almost 70 today and nice for the rest of the week. Mother Nature had a wild weekend. What can I say?

Right? This was one of the coldest weekend I can remember this year! It actually killed off some of the daffodil flowers. Some I cut and have been bringing them in the last few days. They can take the cold, but, this was beyond cold and here it is, in the 60's today and 70's tomorrow. That was such a fast little front, but, damaging to my early bloomers.

Yeah, I am not Catholic, so I don't really pay attention to Lent and all of that. I just happen to be walking through the staff lounge and there are boxes of Packzi's there. Then I am like oh, tomorrow must be Ash Wednesday. Time for fish fry's!

Fat Tuesday always amused me when I was a kid. Adults loading up on things to hold them over the six weeks of Lent.

Though not Catholic, my friend and I used to travel around and hit the different fish fries in the area. We haven't gone that in a while, but I think part of that is because of Covid. It really shut stuff like that down. We will have to get back to it at some point.

I have to admit, COVID shut down everything here, and many things will never come back. Even working? Many places have made telecommuting pretty permanent if they can. Although, government workers were off in the beginning unless your job couldn't be performed, but, most went in the whole way through.

I was pretty lucky that I never had to be off work. I did have to work from home for a bit, but it was really just a knee jerk thing. It's not like anyone would have been here for me to infect or get infected. We have a lot of places that closed and will likely never open again too.

You title and first photo really grabbed my attention! We were shelling pecans today. And pomegranates. As you know these are two foods that you don't exactly gobble up because they take sooooooooooooo long to get too! But aren't they delicious? I loved your post. That little tidbit about pi I did not know. But I have always found the US to have the most fascinating days of honour! I love how you honoured it Denise. I love love love pecan pie. But, would you believe it, NEVER made it. Oh wait. That's not true. The only pecan pie I ever made was what my American friend called UNfried pie. It was a raw recipe. And amazing. But I would love to bake a real pecan pie. Now I'm thinking your recipe looks too good to pass up. I may have to shell pecans after the kids are asleep to stash enough for a pie!

The pecans are from my trees at the house on the Shore. Ha! How ironic that you were shelling pecans too! Not pomegranates, although I do have one bush, but, they are long gone.And yes!! Delicious doesn't even cover it! They are a tiny bit sweet, but, layered in tartness.

We do like our special days, don't we? Down on the Mall in Washington, DC, there is an annual pillowfight day... which is April 6th!! Look for me in the crowds. I have never had the raw recipe, but, I know they have them.

The recipe is not my best, but, it is the very easiest! Even the kids could make it!

Ha!!! It is only a fraction that is very close to π . However, 227 is a rational number that can be written as a recurring decimal! They are not equal, but, it can be said they are approximately equal.

I know, it was a joke. :))

A scotch pie? Do you use mutton, lamb, or beef? I like the minced lamb, but go off-menu and use some extra herbs to bring out the flavor of it.

Eating and sharing food motivates us all to cook and pie is one popular to eat with one and all. If I eat a bit of pecan pie, which I must say I find extra sweet, a generous dollop of cream makes it just right for my taste buds.
But truthfully a savoury pie is one I would choose and pizza pie is always a winner with my family.
Love your blue flowers, just could not feel blue with pretty flowers no matter their colour.

I am a savory eater, for sure. I might take a bite of pecan pie, but, that is more to not hurt feelings than the love of it. I don't eat sugar normally. I just feel so much better having flushed it from my system years ago. I should say added sugar, many things have some form of sugar.

Pizza pie? Oh, yes, please! I love them all! :)

I have many shots of Blue Flowers as there used to be a "Blue Flowers Day" on the now-defunct TSU. I have a habit of turning many different ones blue now. :) Crazy, right?

:) Pie and me aren't a match made in heaven, but, the family loves it and they love it even better on Pi Day! I am not a huge indulger in sugar, I probably wouldn't have it in the house if I were living alone. :) I almost never use sugar, unless I am baking. It is better for your health if you never use it.

Good morning... a little late! Magda is in love with sweets, especially cookies and ice cream, but unfortunately, she has the highest blood sugar. I'm coming in second, my blood sugar is borderline but my cholesterol is higher... Only unpleasantness like this, I didn't think I would get to talk about it. I love pies! We try to make sugar-free, just natural sweetness from the fruit, anyway we try to prevent abuse. Good thing coffee is good without sugar!

The walks you always do are probably what save you. Walking (eating well!) is one of the best ways to keep the numbers down. The Mediterranean way of eating usually keeps the sugar level balanced, but, it is all the extra that we put in things that give those numbers a boost.

Pies do have a lot of sugar, for sure! The pecan pie is all sugar! I like my coffee without sugar too. :) The cholesterol is many times hereditary. I have cholesterol that is higher than it should be, so cutting down on high-fat food, and eating more vegetables, fruits, potatoes, and other naturally-fiber-rich plant food is best for me. Also, more plant-based protein, cutting down on red meat - and also eating more whole grains.

Borderline blood sugar will be easier to control. Do you already take medication for it? If not, a few little modifications will change that!

Yes, these walks are recommended by doctors and nutritionists and we do them with pleasure.
I see we're similar in cholesterol. I'm also trying to change my eating habits and especially my food. I'm trying to give up red meat and eat more vegetables.
I don't take blood sugar medication until the last tests (done in the hospital, before the ablation) I didn't have blood sugar that went over the limit.
