Recipe for Delicious Homemade Pesto - Eng/Esp

Hi friends, I hope you are doing great. Today I want to leave you the secret recipe of my pesto that does not last long in the fridge because it is too rich haha.

First of all, I will leave here the ingredients to use (some of them can be substituted, however, I will leave the ones I use)

  • basil
  • olive or sunflower oil
  • parmesan or pecorino cheese
  • Peanuts or Almonds
  • pepper
  • salt to taste
  • 1 clove of garlic
  • half a lemon

hola amigos, espero que estén súper bien. Hoy les quiero dejar la receta secreta de mi pesto que no dura mucho en la nevera porque es demasiado rico jaja.

Primero que nada, dejaré por aquí los ingredientes para utilizar (algunos se pueden sustituir, sim embargo, dejaré los que yo uso)

  • albahaca
  • aceite de oliva o girasol
  • queso parmesano o pecorino
  • Maní o Almendras
  • pimienta
  • sal al gusto
  • 1 diente de ajo
  • medio limón

In this case, I buy the whole cheese because it is much cheaper and I grate it at the moment of making the pesto. Besides, I use it for other dishes, I even eat it alone (I really like cheese :D).

En este caso, yo compro el queso entero porque me sale mucho más económico y lo rallo al momento de hacer el pesto. Aparte me sirve para otros platos, hasta me lo como solo. (me gusta mucho el queso :D)

Then, each leaf of the basil bunch should be stripped and the white flowers or the tayos should be avoided because they are very bitter.

Luego, hay que deshojar cada hoja del racimo de albahaca y evitar las flores blancas o los tayos porque son muy amargos.

And in the same strainer that I use to wash the basil leaves, I grate the pecorino or parmesan cheese, peanuts in this case, although it is better with almonds, but I didn't have any, and the peanuts give it a delicious texture and the garlic clove once crushed to avoid whole pieces and unpleasant when chewing.

Y en el mismo colador que utilizo para lavar las hojas de albahaca, le rayo el queso pecorino o parmesano, maní en este caso, aunque es mejor con almendras, pero no tenía e igual el maní le da una textura riquísima y el diente de ajo de una vez machucado para evitar que queden pedazos enteros y sea desagradable a la hora de masticar.

I used this mixture of olive oil and sunflower oil, but you can use the oil of your preference. And the quantity, I really do it by eye, because I don't like it to be so oily either, as I prefer it to be creamier as you will see at the end of the result.

Yo utilicé esta mezcla de aceite de oliva con aceite de girasol, pero pueden utilizar el aceite de sus preferencias. Y la cantidad, realmente la hago al ojo, porque tampoco me gusta que quede tan aceitoso, ya que prefiero que quede más cremoso como verán al final el resultado.

In this case I added pepper, salt to taste and half a lemon. We put everything in the blender, turn it on and off several times, stir with a spoon and turn it on again, in this way and with patience we will obtain a creamy consistency.

Yo en este caso le coloqué pimienta, sal al gusto y medio limón. Metemos todo en la licuadora, prendemos y apagamos varias veces, vamos moviendo con una cuchara y volvemos a prender, de esta manera y con paciencia vamos a obtener una consistencia gremosa.

When everything starts to mix simultaneously, we count 1 minute and turn it off and it is ready to be packed. Preferably, pack it in a glass jar, I did it in a plastic one because it really doesn't last at all, at home they devour it haha. But, if you can it in a glass jar, it will last longer.

Ya cuando todo empieza a mezclarse simultáneamente, contamos 1 minuto y apagamos y estaría listo para envasar. Preferiblemente, envasarlo en un pote de vidrio, yo lo hice en uno de plástico porque en serio no dura nada, en casa se lo devoran jaja. Pero, si lo envasan en uno de vidrio, le alargas la vida.

Here you can see how creamy it turned out, the white you see on top is parmesan or grated pecorino cheese that I add at the end (totally optional).

Aquí pueden observar lo cremoso que quedó, lo blanco que ven encima es queso parmesano o pecorino rayado que le coloco al final (totalmente opcional)

This is a tasty recipe! Pesto is also my favorite, but specifically chicken-tuna pesto pasta.
