Yogurt at home. Easy!
One day in the lunch room at work, chatting with a co worker who is all things food (and great at it!) She told me about making yogurt at home, and how simple it really is. She brought me a starter the next day and some quick hand written instructions. It's really simple if you wanna try and I find it less sweet than most grocery store brands and less money.
You'll need:
- 1L of milk (3.25% fat is what I usually use, sometimes 2%)
- pot
- thermometer
- clean glass jars and lids
- yogurt culture pack or 1 tbs good quality fresh yogurt
Instructions:
Heat milk to 160F SLOWLY to avoid boiling and scalding the milk.
Keep temperature for 30mins. Makes microbial stable, killing bad bacteria
Cool to 110F
Remove 1 cup of milk, add 1tbs of yogurt or packet, stir (I used a packet this time to start fresh)
see the evaporation line on the side of the pot, this was 2L batch Wait 5 mins
Mix in remaining milk
Pour into clean glass jars, seal and incubate 8-16 hrs by wrapping in a couple towels placed in the oven with just the oven light on. I do overnight.
Refrigerate, careful to not unsettle too much while putting in fridge. It will set a bit more in the fridge.
Enjoy!
I remove the film forming on the top of milk while it heats and cools. Alternatively strain before putting in jars
I measure full to the top jars (~1/3c more) to account for evaporation
Use culture once per week
New electric pressure/slow cookers have a yogurt setting instead of oven
Careful, milk fats can burn you easily
