Homemade Chicken Satay With Quinoa

I love chicken satay

But I admit, I rarely make it at home. In Holland, it was quite common to eat chicken satay or even with some french fries, so good! I used to be lazy though, and buy the satay sauce at a snack corner or in the supermarket. I rarely took the time to make it myself. I almost forgot about this dinner in May, still in Budapest. I was going through my folders and found this folder, but not in the used pictures folder, so I wondered if I even shared it at the time. The folder was from May 10, 2022, therefore, I went back in my posts and to my surprise, I didn't share these images yet. I even used Google to double-check it. The last month before emigration was super hectic so I'm not surprised if more folders pop up with content I forgot to share. I remember this was one hell of a meal and we were bummed that we didn't have more chicken as our daughter also liked the chicken satay.

And was trying to empty our cupboards by making sure most items were used and not gone to waste. Peanut butter was one of them and I decided this was the perfect time to make some chicken satay. I ordered some vegetables at the supermarket that I loved ordering from, but this time I just ordered some green healthy looking stuff that I had never eaten before. I don't even remember the name of these things, what I do remember is that we both didn't like them much. It was a one-time thing. Quinoa together with chicken and satay sauce works perfectly fine though, it made up for the lesser green part of the meal, and thankfully, we had some cucumber as well!

Making satay sauce as I remember it was a bit too thick and my boyfriend said I could have added WAY more milk. I was trying not to ruin it but apparently, I was too careful adding milk. It's fine though as it still tasted good. Besides milk and peanut butter, I added a bit of garlic powder and Maggi. That's all I think. It's funny that I bumped on these pictures today because I have bought peanut butter last week to try this again and see if I can improve my satay sauce-making skills! This time I also bought some fried onions as that's a great combo if you ask me.

Do you ever make it yourself? Any secret ingredient you wish to share? I know often sambal is added but we won't do that here as it will trigger my boyfriend's stomach too much. He likes spicy but it's rarely a good idea for him to eat spicy food therefore we just don't prep it to avoid the trouble. I'm a bit bummed that I don't have Maggi here yet, I know where I can buy it but that means I need to order it online, I will probably do that before I prep a new chicken satay!

Oe and the most essential thing...Use chicken thigh instead of chicken breast

I have used breast, lol.
I rarely use chicken thigh, to be honest, is that so much better?
It seems like a nightmare to cut.

Way more juice and especially in satay it is just super sweet because of the flavor from the fat. Dont cut away all the fat, just the tendons, it doenst take that long actually. Give it a shot!

Noted, I shall do that next time. I will have to score Maggi first though before I attempt to make another satay :D but I know where to buy it now haha.

It's all a new lesson in what's available where and what not..

My chicken satay recipe. Marinate with ketjap, sweet chilly, onion, garlic and a bit of honey and leave it overnight. After that the sauce isnt even that important anymore

my wife likes to do these chicken/pork skewers barbeque style with vegetables (pepper/zucchini/onion). Nice to see your variation. It looks quite healthy and light for the summer.

My daughter is allergic to peanuts and would have a crazy reaction to peanut butter. She flared up when she ate a peanut m&m a few weeks ago as she didn't realise they had nuts in them when a friend offered her. She only knew the chocolate ones!

Oh that's lovely too! I miss having a barbeque. The restaurant halfway up our hill also has a barbeque during the weekends so I hope we can manage to have that a few times there before summer ends :)

Oh didn't see this last part of the comment until now. That's horrible because although you both know at home, whenever you go for dinner somewhere you have to trust the kitchen staff to be careful and not have touched anything with peanuts.. I always thought that sounds quite scary especially knowing that a lot of people are under pressure in the kitchen. Did this ever happen while eating out? Or only this incident?

We had some earlier incidents so we knew not to risk it.

But this incident happened on her school trip where they also know AND she knows no peanut, but she was just not realising there are 2 types of M&Ms! Then wondered why she became ill.

Well, lesson learned. Thankfully, she recovered!

But that's the thing I mean, even if teachers are aware, during school trips many things happen, it just takes a teacher to look the other way and then notice this happening. You can't expect them to have eyes on her 24/7 during that trip and this is what would worry me badly in a restaurant, not SEEING if someone has some residue of peanuts on their hand /not wash them properly etc..

Do you carry an epipen for these moments? I read they are super expensive these things!

She isnt so bad as isntantly collapsing or anything, but we arent prepared incase she digests alot.

We were playing cards and someone was eating peanuts, and she only had contact with the cards with traces of them and flared up all red in a few minutes though! So thats good we should check further and be prepared.

Looks delicious. We usually do a sauce of just honey, soy, garlic, it turns out really well. We have done the yogurt based sauces in the past, but we usually always fall back to our old standby!

I made satay sauce for the event the other day. They loved it! More about it in my post haha.
But more than happy to share. Mine doesn't contain milk, I usually use a little bit of coconut milk, and sometimes just water and lemon juice.
Well, lime juice here since there's hardly any lemons to be found here that are also affordable.
