A delicious eggplant and red pepper dip [Esp-Eng]

Today with a delicious and easy to prepare recipe is an eggplant and red pepper dip, which can get us out of trouble when receiving visitors at home and is ideal for snacking, eggplant is very versatile in the kitchen and brings us great benefits to our health, provides few calories, is an important source of fiber, potassium and iron, rich in vitamins and minerals. The red bell pepper, the red bell pepper contains a lot of vitamin C and antioxidants.

02 berenjenas, 01 pimentón, 01 puñado de cilantro, 1/2 taza de aceite, 01 cucharadda de vinagre, 01 ucharada de ajo en polvo, 01 cucharada de orégano, 01 cucharadita de azúcar, sal y pimienta al gusto || 02 eggplants, 01 paprika, 01 handful of coriander, 1/2 cup of oil, 01 tablespoon of vinegar, 01 tablespoon of garlic powder, 01 tablespoon of oregano, 01 teaspoon of sugar, salt and pepper to taste.
Comenzamos esta sencilla recela lavando y cortando las berenjenas y el pimentón rojo en bastones o juliana y el cilantro lo cortamos muy menudito.

Luego en un sartén engrasamos ponemos a cocinar las berenjenas hasta que estén suaves, la podemos tapar y colocarle un poco de agua una pizca de sal, a fuego bajo durante 8 ó 10 minutos, dejamos reposar.

Lo mismo haremos con el pimentón rojo, luego de cocinar las berenjenas en el mismo sartén lo echamos y salteamos hasta que quede muy suave, este proceso también dura de 8 a 10 minutos y dejamos enfriar.

Mientras reposan los vegetales haremos la vinagreta en un bol colocamos el aceite, yo utilicé vegetal , pero pueden utilizar el de su preferencia, añadimos la sal, el ajo en polvo, el vinagre, el azúcar, l pimienta, el orégano y el cilantro picadito mezclamos muy bien hasta integrar.
While the vegetables are resting we will make the vinaigrette in a bowl we put the oil, I used vegetable oil, but you can use the one of your preference, add the salt, garlic powder, vinegar, sugar, pepper, oregano and chopped coriander, mix very well until it is well integrated.

Seguido vertemos las berenjenas y el pimentón rojo a la vinagreta revolvemos hasta unificar todo.

Y listo!, lo podemos guardar en un frasco hermético y esterilizado y conservarlo en la nevera y disfrutaremos de un delicioso dip que lo podemos acompañar con galletas, casabe o simplemente solo.
We can store it in an airtight and sterilized jar and keep it in the refrigerator and enjoy a delicious dip that can be served with crackers, cassava or simply alone.
