Stir-Fried Vermicelli Noodle Recipe - coTrain Cooking on A Budget Competition!
Hello food lovers around the world, I'm thanhnga, a girl from Vietnam.This is my fourth post in the @ecotrain cooking contest. Thank you @ecotrain and @eco-alex for creating this contest, I know that there are many people like me who always want to participate in cooking competitions and want to introduce the dishes of their homeland to international friends. Just over an hour left for the contest to end, I'm trying to write everything quickly to enter this contest.😂 Today I would like to introduce to you a popular dish in Vietnam whose main ingredient is vermicelli noodles (competition requirement).
Rice noodles or vermicelli is a very popular dish in Vietnam, we eat it as often as we eat rice.Vietnam is an old country with a history of 4000 years, it is a country associated with the wet rice civilization. However, this small country has suffered many wars of aggression by major empires in the world, causing Vietnam to suffer a lot of human, economic and social losses. However, we have kept our own language, our own national culture and our own cuisine. Vermicelli, pho, rice noodles are products created from rice and other agricultural products. Vermicelli is a dried food made from sweet potato flour or tapioca flour or arrowroot powder.The vermicelli is flexible, chewy and has a clear color, I prefer to eat vermicelli than rice noodles. Vermicelli contains a lot of protein and no cholesterol, so it is a very healthy food. Vermicelli can be prepared in many different ways such as chicken vermicelli soup, sauteed vermicelli, fried vermicelli, ..
In today's dish, I sautéed vermicelli with mushrooms and some other protein-rich ingredients like eggs and sausage. And do you know? In Vietnam, in any meal we must have vegetables. Vegetables and herbs are healthy ingredients and we love to eat it with stir-fries. The freshness of the vegetables will balance out the fatty flavor of this dish.
Now we need to wash all the above ingredients, for lettuce and coriander you need to wash many times then soak them with salt water to kill bacteria in them. I bought black mushrooms and wood ear at the supermarket when they were dried, they are really my favorite ingredients. I add them to anything like stir-fries and soups. They add a crunchy texture and nutty flavor to the dish. Add the dried black mushroom and wood ear in a big bowl and cover with plenty of hot water. We will need to soak them for about 20 minutes until they double in volume. After soaking, wash the mushrooms and wood ear and remove their dirty parts. In a pan, add a little oil then wait until the pan is hot then add the eggs. Crack eggs into a bowl, add some salt and MSG, stir eggs until fluffy, cut sausages into long strands. Fry the eggs until they are cooked on both sides, which takes a few minutes, then continue frying the sausages until they turn golden. Soak the vermicelli in water at room temperature until the vermicelli is soft (about 20 minutes), never soak the vermicelli in hot water as they will clump during cooking. Peel the carrots and use a sharp knife to cut the carrots into long thin strips. Similarly, you also cut the remaining ingredients into long thin pieces. This makes the cooking process faster. Now you need to make sure that you have all the ingredients ready to stir-fry the vermicelli. First, add a little oil to the pan, add the vermicelli and stir-fry for about 1 minute, you need to stir constantly so that the vermicelli does not burn.Add carrots, mushrooms, season with 1 teaspoon salt, 1/2 teaspoon MSG, stir well. When everything is mixed together, add the eggs and sausage. Stir the ingredients together for 2-3 minutes and then turn off the heat. Transfer to a plate and serve with cucumber, lettuce, and coriander. I like this fried vermicelli to be spicy, so I served it with the fried vermicelli with chili sauce.
