In Need Of Simple, Yet Flavorful Food? 🍽 Try My Family's Recipe Of Eggs & Potatoes In Tomato Sauce

Hungry and in need of something simple, yet still delicious? That's where my family recipe of cooked eggs in tomato sauce with potatoes comes in. I've had this dish at my mothers, at my aunts and even on weekend getaways and it's always a hit.

After having this meal at my aunts some time ago, I couldn't stop thinking about it and wanted to prepare it for myself and that's just what I did. Six eggs were put into the pot to be hard boiled, while I cut and washed five small to medium sized potatoes into little chunks.

Following that the potatoes went into the hot oil until golden brown, all the while I was dicing two medium sized tomatoes, one onion, one red pepper and six cloves of garlic, because I was through my stash of pre-chopped garlic. The ketchup for the sauce was also ready on the counter.

When the potatoes were golden brown, it was time to fry the hardboiled eggs lightly, until golden brown on their sides in the hot oil.

After the eggs were removed, the garlic, onion and tomatoes were quickly sautéed. Thereafter some ketchup and water were added to make the sauce, after which the eggs and tomatoes went in. While stirring the ingredients the pepper and salt to taste were added. Then I let it all simmer on low heat and occasionally tasted and checked the thickness of the sauce.
