Hello friends and Creative Hearts ❀️. What a beautiful Sunday for another Creativity. And am wishing you all a healthy and productive week ahead.

Yesterday started with a sunny 🌞 morning but suddenly the weather changed and it rained all noon πŸ•›, but today seemed more brighter , cool and welcoming . Its a Sunday we need to eat something exotic and delicious as a side meal πŸ₯˜.

Sometimes we need to go out of our way to prepare some new recipes. It could be main cuisines, side dishes or something new for breakfast. This way, we will find things to incorporate in our usually weekly meals. Making some new recipes is very exciting knowing that we will enjoy ☺️ some new healthy meals.

Making some research in the internet through the week I came across this healthy side dish recipe of Spicy 🌢 Roasted Carrots πŸ₯•, Potatoes πŸ₯”, Garnished with Avocado. A delightful combination I bring in today’s Creative Sunday Initiative to share and teach you guys . Its a side dish that can accompany lunch πŸ₯™ or dinner πŸ₯˜, making them enjoyable.

Here are the ingredients and step by step to prepare this healthy recipe.

INGREDIENTS:

1 large Sweet Potatoes ( Peeled and chopped)
5 finger carrots
1 medium size avocado πŸ₯‘
2 tablespoons of vegetable oil
1 tablespoon of Dark Soy Sauce
1/2 teaspoon of ginger
1/2 teaspoon of black pepper
1/2 teaspoon of turmeric
1/2 teaspoon of dry herb 🌿
1/2 teaspoon of curry powder
Salt to taste.

STEPS FOR PREPARATION:

Step 1.

I will commence preparation by first cleaning, washing and cutting the carrots in squares for a unique shape.

Here I already have the potatoes peeled and washed . The potatoes πŸ₯” carrots πŸ₯• and the avocado πŸ₯‘ being the base ingredients for this recipe.

Step 3.

The spices for this recipe will serve as a boost of flavor and aroma that will bring out the deliciousness of all the combination.

Step 4.

To proceed to roast, I will pour the chopped potatoes into a bowl πŸ₯£ adding some pinch of salt in it and mix thoroughly

Next is to glaze the baking pan with some vegetable oil.

Step 6.

I will take the potatoes into the glazed pan, spreading it all around. Then will add the carrots on top of the potatoes.

Next is to sprinkle all the spices all around the potatoes and the carrots making sure it gets everywhere .

I will drizzle some vegetable oil all around it for that roasting heat up to roast.

I will then take it into the preheated oven to roast it at 200 Celsius for 30 minutes.

Step 10.

I will wash, cut and slice the avocado to keep ready.

Once the carrot and potatoes are roasted, I will introduce the avocado,

Then will place them as toppings on the roasted carrots and potatoes

Will introduce also the Dark Soy Sauce as a final touch on the avocado for taste.

And will finally heat it up again for just 3 minutes to incorporate the soy sauce on the avocado.

An exotic healthy side dish that looks so exquisitely inviting and appetizing. Its deliciousness is so irresistible. It is worth all the time and waiting because its full of good health. I recommend you take out time and tty this recipe.
