Hoy desde la hermosa isla de Margarita, con mucho frío y mucha lluvia, paso por aquí a compartir mi receta del guiso para hallacas. Con esta cantidad me rinde para 25 hallacas medianas.
Today from the beautiful island of Margarita, with a lot of cold and rain, I'm here to share my recipe for hallacas stew. With this quantity I can make 25 medium hallacas.
Ingredientes:
- 500 gramos de carne de cochino
- 1 pechuga de pollo completa
- 1 pimenton
- 10 ajíes dulce
- 1 cabeza de ajo
- 1 ramo de ajo porro
- 1 ramo de cebollin
- 5 cebollas
- 150 ml de salsa inglesa con vino tinto
- 150 gramos de uvas pasas
- 150 gramos de aceitunas
- 2 cucharadas de alcaparras.
- 2 cucharadas de papelón derretido
Ingredients:
- 500 grams of pork meat
- 1 whole chicken breast
- 1 bell pepper
- 10 sweet peppers
- 1 head of garlic
- 1 bunch of garlic
- 1 bunch of chives
- 5 onions
- 150 ml of Worcestershire sauce with red wine
- 150 grams of raisins
- 150 grams of olives
- 2 spoonfuls of capers.
- 2 spoonfuls of melted paprika
PROCEDIMIENTO
Paso 1
Picar todos los aliños
Paso 2
Desmenuzar la pechuga de pollo previamente cocida.
Paso 3
Picar y lavar la carne de cochino.
Paso 4
Mezclar las carnes con un poquito de sal, los aliños y un poco de salsa inglesa con vinontinto, dejar macerar por dos horas aproximadamente.
Paso 5
Transcurrido ese tiempo cocinar a fuego lento.
Paso 6
Al pasar 20 minutos añadir, 2 cucharadas de papelon, las uvas pasas, las aceitunas y las alcaparras, mezclar con una paleta de madera.
Paso 7
Cocinar 20 minutos a fuego medio, probar y corregir el punto de sal.
Y listo el guiso amigos.
Yo lo preparo un día antes de armar las hallacas, espero sea de su agrado mi receta.

Shred the previously cooked chicken breast.
Step 3
Chop and wash the pork.
Step 4 Mix the meats with a potato masher.
Mix the meats with a little salt, seasonings and a little Worcestershire sauce with vinaigrette, let marinate for about two hours.
Step 5
After this time, cook over low heat.
Step 6
After 20 minutes add 2 tablespoons of paprika, raisins, olives and capers, mix with a wooden paddle.
Step 7
Cook for 20 minutes over medium heat, taste and correct the salt.
And the stew is ready, my friends.
I prepare it the day before making the hallacas, I hope you like my recipe.
