Fried Aubergine on a Sublime and Beautiful Sunday

Have you tried frying eggplant with egg?

It is simple to make and delicious!



You will need at least one aubergine, 1 egg (per half a eggplant), soy sauce, and 2 tbsp cooking oil.

Slice the eggplant in half (longways), and then roast the eggplant until soft. Then peel.



Beat an egg with soy sauce.


Take the eggplant and press it flat on the egg.


Do it on the other side of the eggplant as well. Press it flat.


Fry one side of the eggplant in heated oil for 2 1/2 to 3 minutes or until it is done.


Turn the eggplant to the other side, 2 to 3 minutes, and fry until done.


And now it is ready to be served. It's that simple!

Sounds easy and quick; but curious; how long does it take to roast an eggplant? I've never been a fan of eggplant and would love to find a way that I could really enjoy it. This has promise! Thanks for sharing sis! Hugs and kisses!🤗😘💖🌸

That's the thing, it takes long... 35 minutes at 375 degrees 😄.
But I kept busy (folding my laundry) while it was in the oven.
You know me... not a dull moment!

I usually fry eggplant with just flour so this is something interesting and worth to try since i love both egg and eggplant.

Have not tried eggplant with egg but we have bitter gourd with egg and also tomato with egg. I guess egg plant is similar to the texture of tomato but sans the bit of sour which I like.

Hello @silversaver888! How have you been? Time without going through your blog. I don't know if it happened to you, but I marvel in an extraordinary way, as sometimes the same topics come to me suddenly, as a matter of chance. For example, yesterday my brother wrote to me to ask me about Hive that I had already told him a little, then he asked me about another platform that other people had told him called Noise, which I had never heard of and 20 minutes later I read here on Hive a post from a Hivers that talked about Hive, Noise and Read cash (which I heard about a few days ago as well). I was very surprised. Then this morning I was struck by a post from a person from Nigeria talking about eggplant, I think I had never read anything on Hive about it. He was talking about two types of eggplant that he knows in Nigeria, one white and one green that when ripened turn yellow. This surprised me a lot because the only eggplant I know is purple 😱. Now I read your post and it's a berengena 😅 recipe. These coincidences fill me with amazement lol. has it ever happened to you? By the way, this eggplant that you cooked, which must be very rich, I am sure of it, what color is its exterior?

Hmmm... you know what, it does happen to me!!!
It must be calling to ya... hahaha!
This eggplant of purple in color, and it is plump,
so you split it in to before roasting it.
They are called Black Beauty Eggplants.
