Vegetable Curry
Merry Christmas to all my Christian brothers and sisters in hive. Today I cook a vegetable curry for our lunch moreover, instead of coconut paste based sauce.
I used onion- cashew based sauce.
This is a healthy and tasty recipe, and sure your family will love it.
Ingredients:
To blender
Fried onion
Cashew 12 pcs.
Whole garam masala
Cardamom 3pcs.
Cinnamon stick. 1 inch
Cloves 3 pcs.
Bay leaves 1 pc.
Cumin seed 1/4 tbspn
Masala powders
Red chili powder 1 tbspn
Coriander powder 1 tbspn
Salt
Tomato paste 2-3 tbspn
Vegetables
( No specific Amount of vegetables ) Depends on you.
Bell Pepper (any color) 1pc.
Red long chili
Green beans 1 can
Red potatoes
Ginger garlic paste tbspn.
Procedure:
Fry onions, till brown
Same like this.
Blender fried onion and cashew. Make it paste.
Heat oil in a pan, splutter cumin and whole garam masalas.
Add in ginger garlic paste. Sauté till raw smell is gone
Add in tomato paste. Sauté for 2 minutes
Sauté for 2 minutes
Add in masala powders. Season with salt.
Add in vegetables.
Coat vegetables.
Add in 100 ml water
Put to high heat and cook for 2 minutes. Put to lid.
Add in fried onion- cashew paste
Stir, adding a little water. Put to lid. cook for 3 minutes in low fire.
And your vegetable curry is done.
Note:
Incase tomato paste is unavailable, you may use 2-3 fresh tomato puree in this curry, then cook the tomato puree well.
Fry 2-3 pieces medium onion till brown.
To be blender with cashew, incase add a little water to make a onion- cashew paste.
You may use any vegetables available, that suits the curry.
