Potato Capsicum curry
Hello foodies! Today I prepared potato capsicum curry for lunch. This curry is easy to cook and healthy. This curry can be eaten with rice, Chapatti or dosa.
I would love to share, how I cook my potato curry. In here I used red potatoes, orange bell pepper, and long red chili. You may use any variety of peppers and potatoes as well.
Ingredients:
Red Potatoes 4 pcs. small
Orange bell pepper 1 big pc.
Red long chili ( not spicy ) 1pc
Curry leaves 2 sprigs
Ginger 2inch
Garlic 2 pcs
Fresh turmeric 1 inch
Coriander powder 1/2
Cumin seeds coarsely grind 1 pinch
Fennel seeds coarsely grind 1 pinch
Coriander leaves
Methods:
Boil potatoes till soft, Transfer to container let it cool.
Mashed boiled potatoes.
Heat oil in a pan. Add in cumin fennel seeds and curry leaves. Saute for few minutes.
Add in onions, saute till brown.
Add in ginger, garlic and turmeric paste.
Saute till raw smell is gone.
Add in mash potatoes.
Add in turmeric, coriander powder.
Mix till well coated with potatoes.
Add in 1 1/2 cup of water.
( I used rice water it will add more taste to curry, since I am cooking rice as well)
Simmer for 3 minutes.
Add in peppers.
put to lid, continue to cook for 4-5 minutes. Mix occasionally.
Add in coriander leaves.
And warm and hearty potato curry is ready.
I cook potato curry in a busy weekdays to manage my other household chores as well.
