Eggplant in egg/ Tortang talong

Hello everyone, I'm happy to come back after months of being passive in hive, thanks for the encouragement of @sherylneil.

Today I am going to prepare a simple dish
With eggplant in egg, a Fresh tomato chutney & match with brown rice for our lunch.

A medium to large eggplants is very ideal to make this dish. So let's get started.

Ingredients:

Eggplant ( medium) 8pcs.
Eggs 3 pcs.
Salt

Methods:

Wash eggplants and make some slight hole, using fork.

Grill eggplants, till cooked.

Peel off charred skin of eggplant, use little water to dip your fingers, it helps in peeling off the eggplant skin easily.

Set aside. ( You can see the natural oil / juice that came out in eggplant 🍆 )

Prepare 3 eggs, add salt and stir.

Heat some oil.

Dip eggplant in stirred egg , flattened slowly using fork.
Then fry in low fire.

And because I don't have much time to cook for the gravy . I just made it simple pureed tomatoes 🍅
I did not have the finish product of tomato puree because, I forgot to take photo of it.

This fresh tomatoes are really great to match with rice.

And atlast rice is about to cook now.
Brown rice, takes more time to cook than white rice, but brown rice is healthier than white rice.
