Chicken Stew in Tomato sauce / Kalderetang Manok

This dish was shared a year ago and I would love to share it again with you. Delicious chicken cooked in tomatoes and tomato sauce, Full of flavor with a thick savory sauce. There are various ways to cook this dish, today we are going to cook this without marination and it will still be delicious. I omitted the traditional liver spread and used cheddar cheese instead.

Ingredients

Onion
Garlic
Chicken,1 kilo, In medium pieces
Tomato sauce, 500g
Water or rice water
Potato, quartered
Carrot, sliced
Capsicum, green/red, sliced
Frozen peas, ½ cup
Cheese
Salt
Pepper
Bay leaves
Pandan leaves (optional)

Preparations

  1. Fry the Potatoes and drain in a paper towel. Set aside.

  2. Fry the chicken until lightly brown, a few pieces at a time and set aside.

  3. In the same pan, Add 1 tablespoon of oil and saute the garlic, onion and tomato until soft.

  4. Add the fried chicken and stir cook until all the ingredients are combined

  5. Add the tomato sauce, bay leaves, pandan leaves and water or rice water

  6. Bring to a boil and reduce heat to medium low for 20- 25 minutes.

  7. Add the vegetables and cook until tender.

  8. Throw in the frozen peas and stir to cook.

  9. Lastly, Add the cheese and adjust your Seasoning with salt and pepper to taste.

  10. Serve warm with rice or bread.

You can add more vegetables to create different textures and flavors.
