Easy Lentil Salad Recipe for Lentil Lovers

This is my first post on Liketu. I hope I can get everything right. Today, I want to share the recipe for the lentil salad I made with you. Lentils are loved by everyone in our family, and we make this salad in every season, whether it's summer or winter. Believe me, this vegan recipe is not just absolutely delicious, but also, dare I say, sophisticated enough to impress your guests? Let's all jump on the lentil bandwagon and enjoy the ride!
Ingredients
1 cup of green lentils
2 medium garlic cloves (we'll use them separately)
2 cups of vegetable broth
3 tablespoons of olive oil (I used the extra virgin variety)
2 tablespoons of minced parsley
2 tablespoons of lemon juice
5 small shallots
2 tablespoons of capers
1 tablespoon of balsamic vinegar
Sea salt and black pepper, to taste
1 bay leaf
How to make
In a good pot team up the lentils with that cozy vegetable broth, a couple of garlic cloves and don't forget a bay leaf for that extra touch. Get things bubbling by bringing it all to a boil. Then dial down the heat to a gentle simmer. Give it around 30 min. of quality time. When most of those lentils are tender and welcoming, go ahead and switch off the stove. Let them hang out for about 10 min, letting off some steam.
Grab a skillet and let the shallots sizzle away until they turn this beautiful deep golden shade. It's going to take around 10 min. and here's the tric don't fuss too much by flipping them around. Trust me, less flipping more caramelization magic. Oh and right at the end, introduce them to a dash of balsamic vinegar for that extra flavor twist.
If you're all in for a burst of garlic goodness, grab that microplane or a trusty garlic press. No fancy tools? No worries. Just finely mince that garlic. Now mingle that garlicky goodness with some zesty lemon juice and a drizzle of olive oil. This dynamite dressing is ready to rock!
Scoop those warm lentils into a mixing bowl and let them have a moment to themselves, just until they stop sending out those lovely steam signals. After that peaceful pause, invite the sautéed shallots, that dazzling dressing, those chopped-up capers and fresh parsley to the party. Give it all a gentle mix and let those flavors fuse in harmony. And of course don't forget the salt and pepper a dash of each, according to your taste.
