White mushrooms and red pasta!

I was confused by the same old dilemma of what should I cook today until my eye caught a packet of pasta I had bought in the summer, while we were spending some time in Trumpman's village. Their bright red color comes from red Florina peppers and they also have the distinguishing flavor and aroma.

The lady who was selling them told me they go great with mushrooms, so there I made a mushroom sauce for my pasta!

I sauteed my fresh white mushrooms in olive oil. I added white pepper, smoked paprika, salt, four pieces of allspice, oregano and thyme. Next, I added two handfuls of chopped red and green peppers and a grated carrot, two grated tomatoes and one packet (500 gr) of tomato juice. A little parsley and mustard came in the end along with some water, and the sauce was left to simmer until it was ready.

I loved the beautiful red color of both the pasta and the mushroom sauce. The flavors blended well together and my dish was complete with some gruyere flakes on top.

Healthy, delicious and relatively quick and easy to make. Of course one serving was not enough, and we wanted a refill! Only Little Man did not seem to like it very much. Probably because of the red peppers, he's not a fan as their taste can be quite intense. That's ok though, I volunteered to empty his plate. 😅😅
