Pork with veggies in the oven!
I don't particularly enjoy pork unless it's barbecued or roast in the oven...
A lovely way to cook a nice piece of pork, without too much fat, is with mixed veggies.
I cut potatoes, carrots, green and red peppers, zucchinis, onions and garlic here. Seasoned with a variety of spices and herbs and a few minutes before turning the oven off, I added some haloumi cheese. Served hot wit some fresh bread, it was a really enjoyable dish!
