Winter Veggies with Mung beans | Super Delicious and Full of Nutrients.

A sunny winter morning, a plate of steamed rice with a side of vegetable curry; that sounds like home!

I remember, my Mom used to prepare this dish and I absolutely love it. This is a very flexible dish, you can add any kind of beans and any vegetable you like and boom! This will be one of the best curries you may ever try.

Let me share my recipe.

I took six types of vegetables.

  • Pumpkin
  • Papaya
  • Potato
  • Cauliflower
  • Carrot
  • Onion leaves

You can add anything you like, don't hesitate. Cut them in big chunks, wash and add them with the mung dal (beans).

I have added a cup of onion slices, two crushed garlic cloves, and a good amount of chili slices.

Then add salt as per your taste and some turmeric powder. I almost forgot to tell you, you can also add some cumin seeds as well to extra taste.

Put a lid on and cook it for 5 minutes. I didn't add any extra water. Also, I like the veggies 75% cooked. If you don't like it this way then give it some more time to cook through.

Our veggies are almost ready, now it's time to prepare our dal.

*Roast your mung dal, cool them off, wash them, and cook with two cups of water. You can add any kind of dal/beans like lentils. Then add some salt, bay leaves, and turmeric powder.

It will look like this. Don't worry by seeing the look, when it cooks well, it will look like this -

I cooked the mung dal for almost 15 minutes, if you use a pressure cooker then it will take less time.

Mix them well with the pre-cooked veggies.

If you don't like this two-step process then I would suggest your cook the dal/beans first then add the veggies when it's half cooked. That process will also work.

I added some mixed spice powder before turning off the heat. It's optional just like coriander, I didn't add coriander this time but I usually love the taste and flavor of it.

It's done.

Now time to plate the curry.

Doesn't it look delicious?

This is a perfect curry you can enjoy with rice, roti, or paratha. Not only it goes well as a side dish but also you can eat this curry as a main dish with some salad. We sometimes eat this curry with roti in our breakfast and sometimes with rice in our lunch and dinner; either way, it's a nice dish.
