Las galletas polvorosas son un dulce típico de Venezuela. Se trata de unas galletas elaboradas a partir de harina y manteca y dotadas de una textura extremadamente suave. La tradición dicta que es una receta que proviene de la época colonial, pero su origen es más bien incierto. Hace unos 50 años eran muy comunes en las cenas navideñas, especialmente en Caracas, pero esta costumbre se ha ido perdiendo.
Powdery cookies are a typical Venezuelan sweet. They are cookies made from flour and butter and have an extremely soft texture. Lo más común es que la polvorosa tenga un gusto acanelado, pero también es posible utilizar ralladura de limón para darle sabor. Otro detalle importante es que la masa debe compactar, pero lo suficiente para que la galleta resulte frágil y se deshaga en la boca. Esto se logra a través del equilibrio entre harina, azúcar y manteca vegetal. 200 gramos de harina leudante (de repostería) o todo uso
100 gramos de azúcar glass (½ taza)
100 gramos de manteca vegetal
½ cucharadita de polvo de hornear o levadura química (en caso de no usar harina leudante)
1 cucharadita de esencia de vainilla
1 pizca de sal
200 grams of leavening flour (pastry flour) or all-purpose flour
100 grams of powdered sugar (½ cup)
100 grams of vegetable shortening
½ teaspoon of baking powder or chemical yeast (in case you do not use leavening flour)
1 teaspoon vanilla essence
1 pinch of salt
Preparación / Preparation
1 Tras medir todos los ingredientes, precalienta el horno a 200 °C. Luego, mezcla la manteca con la vainilla y el azúcar. no recomiendo hacer las galletas polvorosas con mantequilla porque su textura varía.
1 After measuring all the ingredients, preheat the oven to 200 °C. Then, mix the butter with the vanilla and sugar. I do not recommend making the powdered cookies with butter because their texture varies.
2 Mezcla bien hasta suavizar completamente la manteca. Es probable que te tome unos 5 minutos batir con una espátula para romper todos los fragmentos de la manteca vegetal. Al final, debes obtener una pasta con consistencia de pomada. Continua agregando el resto de ingredientes según tu conveniencia, esto no afectará el resultado.
2 Mix well until the shortening is completely smooth. It will probably take you about 5 minutes to beat with a spatula to break up all the vegetable shortening fragments. At the end, you should get a paste with an ointment consistency. Continue adding the rest of the ingredients at your convenience, this will not affect the result.
3 Deberás obtener una masa con una textura de arena más fina debido al azúcar. Asegúrate de usar un azúcar de un grano no muy grande.

4 Compacta la masa con tus manos poco a poco hasta lograr que se una completamente.

5 estira la masa con un rodillo

6 una vez la masa este estirada utiliza un cortador con tu forma preferida.

7 una véz tengamos nuestras galletas cortadas las colocamos en una bandeja engrasada y las llevamos al horno durante 15 minutos.

8-Degustar nuestras galletas con el topping deseado, en este caso utilicé azúcar glassé para la cubierta
