Filipino-Style Tacos

Ingredients:

For the Filling:

  • 500g ground pork or beef
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1/4 teaspoon chili powder (adjust to taste)
  • Salt to taste
  • Cooking oil

For the Toppings:

  • Shredded lettuce
  • Diced tomatoes
  • Grated cheddar cheese
  • Sour cream or plain yogurt
  • Sliced green onions
  • Sliced red onions

For the Taco Shells:

  • Small flour tortillas
  • Cooking oil for frying

Instructions:

  1. Prepare the Filling:

    • In a large skillet, heat a bit of cooking oil over medium heat.
    • Sauté the chopped onion and minced garlic until translucent and fragrant.
    • Add the ground pork or beef and cook until browned, breaking it up into smaller pieces with a spatula.
  2. Season the Filling:

    • Add the tomato sauce, soy sauce, brown sugar, black pepper, oregano, paprika, chili powder, and a pinch of salt.
    • Stir well to combine all the flavors.
    • Simmer the mixture over low-medium heat for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken.
  3. Prepare the Toppings:

    • While the filling is simmering, prepare your toppings by washing and chopping the lettuce, tomatoes, green onions, and red onions.
    • Grate the cheddar cheese and slice the jalapenos if you're using them.
  4. Fry the Taco Shells:

    • In a separate pan, heat cooking oil for frying the tortillas.
    • Carefully place each tortilla into the hot oil, shaping it into a taco shape as it fries.
    • Cook until the tortillas are golden and crispy. Place them on paper towels to drain excess oil.
  5. Assemble the Tacos:

    • Fill each taco shell with a generous amount of the meat filling.

    • Top with shredded lettuce, diced tomatoes, grated cheddar cheese, a dollop of sour cream or yogurt, and sliced green and red onions.

    • Serve the Filipino-style tacos while they're still warm.
