White Rice And Stew
Yesterday was Sunday and because I was feeling pretty pumped I decided to do a bit of cooking. The final product was my Nigerian style white rice with beef and seafood stew ๐ hope you enjoy my process of preparing it as much as I enjoyed eating it ๐๐๐

First, I wash my beef thoroughly and place it in a cooking pot.
Added chopped onions, seasoning cube, thyme, curry powder, ginger/garlic paste, and salt to test.
With a spoon, I combine the ingredients as much as I can with the meat then let it cook.

I blended my fresh tomatoes, pepper and onions then put that on another pot on the fire and allow it to dry.
Deshell my fresh shrimps which I also steamed with a pinch of salt and water(5 minutes should do).
I washed my fish and also steamed it separately with pepper, salt, thyme, and a bit of water, and after which I deboned it, leaving it in chucks to be added to the stew later.
Next, I fried my meat then shallowly fried my steamed shrimps.

In a pot, I added my vegetable oil and allow it to heat.
Next add my chopped onions to the oil, bay leaf, and Tyme.
Gave it a few minutes and added in my tomato paste.
Now i add in the tomato, pepper, and onion mix i had dried earlier and just cover that and let it cook for a few minutes under low heat.
_ By this time the entire kitchen should be filled with the delicious aroma coming from your cooking pot ๐๐
Now i add my beef stock, salt, and seasoning to test and my curry powder.
Finally added in my fried beef, shrimps, and fish chunks. try to ensure everything is completely immersed in the straw, cover, and let that simmer till it's ready.

Measure your rice(i used per-boiled long-grain white rice)
First cold rinses your rice to remove any dirt or dust, then add water and parboil for 10-15 minutes.
Take it off the cooker and wash after which you can transfer it back to your pot, add salt to test, and water to cook.
And that's all ๐คฉ your delicious white rice with stew is ready to be devoured ๐ฝ

Glad you like it and it really is yummy plus a bit spicy @thekittygirl not sure how stew is prepared in other parts of the world ๐ but this is how we do it here in Nigeria which was why I called it traditional Nigerian stew.
I have never tried mixing meat and seafood in a dish

Believe me those intestines can be delicious depended on how they are prepared. Not a lot of people here would take the extra time to really wash it like I did and some weird folks try to tell you all that slime is fat and meant to be eaten ๐ฅด no thank you ๐๐ mom taught me better than that.
For me cooking should be equal parts skill and care.
Yeah before now I always added extra water to the meat from the start but when I discovered this method ๐๐๐ my meat has NEVER tested this good.
I can't count how many times in the past I have gotten splattered by the damn cooking oil when frying ๐ but i was a bit nervous with the video so I forgot to temper the oil with a bit of salt before frying โ will try to keep that in mind and yes i always pull out that black vain on the shrimp ๐ฆ another oversight I didn't mention ๐๐คฃ glad you like the video @dreemsteem

You REALLY have to try the no extra water for cooking your meat and you absolutely must tell me what you think ๐ just don't forget to reduce the amount of seasoning and salt you would normally use with the general water method ๐ค๐ค
