Freshly Prepared Egusi Soup…(Nigerian Delicacy)

This dish is called Egusi soup, it’s a very popular soup in Nigeria and it’s called egusi because the major ingredient is gotten from Mellon seeds. First of all, I had to go to the market to get the ingredients before preparing them and then finally cooking.

Ingredients

Palm oil

Grounded

cray fish

Seasoning cubes

Stock fish

Beef

Dried fish

Bitterleaf

Grounded Mellon (egusi)

Salt

Fresh pepper

Onions.

First things first, I had to prepare my stock made from the fish, beef and stock fish which will be the base of my soup. I added a little water to allow it to boil together with onions, fresh pepper and salt. After which it was set aside.

**More Steps: **

For the soup, I started by heating up the oil in the pot before adding my onions and Mellon. I fried them for a while before I added the stock, crayfish, a little salt and pepper. It was allowed to boil for awhile before I added the bitter leaves and the soup was ready to be eaten. Most Nigerians know the taste and sweetness of this soup, it is one of a kind!

It can be eaten with pounded yam, fufu, garri or semo.
