Delicious Orange-Walnuts Winter Cake

I hope it's a good day for everyone.
I made orange cinnamon walnut winter cake and I will share it with you.
Today was a day when I wanted to rest at home. I postponed all my work and gave myself permission.
I focused on what I wanted to do, activities that would make me happy and fulfill my mood.
I had breakfast, started a new TV series and enjoyed the first four episodes.
I craved a sweet snack and went to the kitchen. The fruit plate on my table inspired me. And I made my delicious orange cake.
There are some foods that are more enjoyable to eat in winter. This cake has exactly such a flavor. Every single ingredient I use in it is a winter ingredient.
It has a soft texture like cotton. The multiple flavors that it makes you feel on your palate while eating it take the cake to the top levels.
When the sweet and slightly sour taste of orange is added to the toasted taste of walnut, it turns into a feast.
Of course, the perfect scents of cinnamon and ginger leave a pleasant smell in the house while the cake is baking.
Consuming plenty of oranges, which are rich in vitamin C, in winter will be beneficial for your health.
In this cold weather, if you have woolen pajamas on, slippers on your feet, a cup of tea and the necessary ingredients, this delicious cake is all you need for a happy day :))
By the way, in a series I watched a long time ago (the name did not come to mind), the depressed female series character closed herself in the kitchen and baked dozens of cakes. While making this cake, that scene came to my mind and I smiled to myself :) I guess baking cakes is really good for depression. It may be an unproven fact: ))))
Then I am writing the recipe right away.
Ingredients for Orange Cake:
-3 eggs
-1 cup granulated sugar
-2 cups flour
-1 tea glass yogurt
-1 tea glass of oil
-1 orange
-1 tea glass of fresh orange juice
-1 handful of walnuts
-1 teaspoon cinnamon powder
-1 teaspoon powdered ginger
-2 packets of vanilla
-1 baking powder
-1 teaspoon baking soda
Recipe:
-First, break the eggs at room temperature into a suitable whisking bowl.
-Add sugar on it
-Beat the eggs and sugar well
-Stop whisking when the egg turns light in color and foams.
-Add a glass of oil to the mixture and mix.
-Then add the yogurt.
-Grate the rind of one orange using a small grater.
-Squeeze the juice from the orange and add to the mixture.
-Then add two cups of flour.
-Add vanilla, baking powder and baking soda.
-Add the cinnamon powder and ginger and stir.
-Finally add the walnuts and your cake batter is ready.
-Set your oven temperature to 175. We will bake on the Lower Top setting without fan.
-Grease a suitable cake mold with butter first and coat all sides.
-Sift some flour into the mold you greased, let the flour stick to the oil and pour the excess flour.
-Pour the cake mixture into the mold.
-Put some more walnut pieces on top.
-And put it in the oven.
-Check after about 30-35 minutes and remove from the oven.
-Once cooled, slice and serve.
Tips for making a good cake:
- Absolutely all ingredients must be at room temperature. Otherwise the cake will not rise.
*Sugar and eggs should be whipped in a controlled manner until foamy foam, sugar should melt, but if you whisk excessively, the egg will lose its effect and the cake will not rise properly.
*The cake dough should not be too liquid. If it is still not thickened when you add two cups of flour, do not hesitate to add a little more flour.
*It is very important to grease the cake mold. If it is not greased, it will stick to the mold and the cake will fall apart.
*Oven temperature and cooking time may vary in each oven.
*Never open the oven door for the first half hour while the cake is baking. The cake will deflate and will not rise again.
*Do not cut the baked cake immediately. Let it cool and rest for a while.
*Instead of walnuts, you can add products such as raisins, other dried fruits, almonds, hazelnuts.

I used to make variations of "Friendship bread", so called because you get the starter from a friend, and while preparing your recipe, the starter multiplies and you give some of it away to friends.
I made many variations, but I always found that added nuts and some dried fruits would sink to the bottom during cooking.
I found I could start the pan, take it out after 15 min then add the other stuff and it would stay nearer the top.
Alas, I do not have any loaf pans right now.

If you roll the dried fruits you will add in flour and throw them into the dough in that way, you will notice that the fruits do not sink to the bottom, I say try it. Thank you for the comment🙏
Now that we've been talking about it, and I found and shared the Starter Recipe, I will have to get some loaf pans and bake. It would be a way to pass the time and warm the house at the same time!
