Propiedades del hígado de res:

  • Tiene un alto contenido de vitamina B12, que ayuda a la formación de glóbulos rojos. Por lo que ayuda a subir la hemoglobina.

  • Aporta vitaminas A, E y C, zing, ácido fólico y fósforo.

  • Es libre de azúcar.

  • Contiene hierro, potasio y magnesio.

Preparación:

-Primero tomé los bistec de hígado, los compré ya arreglados pero de no ser así retiramos todo el borde que es una delgada capa, puse el hígado en un recipiente y le agregue el juho de limón mientras removía el hígado para lavarlo.

-Corté en julianas el pimentón, las cebollas y en ruedas el tomate.

-En un sartén a fuego medio, puse los bistec de hígado y dejé que se cocinaran muy. Esa fue la recomendación de la nutriologa: cocinar muy bien el higado por ambos lados y servir con tomate fresco.

Al principio empezó con una dieta de carnes rojas, duramos unas semanas preparando estas comidas. Pero su enfermedad es en el estómago y no procesaba bien las carnes rojas, ahora es una dieta estrictamente vegana. No porque sea malo solamente que para él, según la nutrióloga, ya no tolera las carnes. Son momentos difíciles, tenemos desde diciembre con estos cambios de hábitos alimenticios.
