Good afternoon, Hive's wonderful chefs and foodies! It's dinner time, and I've got something special for you today. So take a deep breath and carefully exhale before studying and examining what I have in store for you today.
Today I wanted to try something new, an easy to make Bitter leaf vegetable soup with fried fish. Okay, so I'm a single man trying to make ends meet in Lagos State, one of Nigeria's crowded states. Because I don't have anyone to cook for me when I'm not at home or at work, I've taken it upon myself to cook for myself. It's common in Lagos, and if you want to make it through the situation, you'll need to be a fantastic cook, just like any Bachelor. Let me to fully explain what I've here. I made a Bitter leaf vegetable soup with fried fish, as previously said; the process and ingredients are both straightforward, clear, and economical.
The Ingredients
Vegetable (Bitter leaf)
Fried Fish
Stock and Smoked Fish
Crayfish
Blended Tomatoes, Red Pepper and Onions
Palm oil
Salt and Maggi
Like I stated earlier, the process is simple and straightforward
The first step is to ensure that the bitter leaves have been thoroughly rinsed, leaving no sign of bitterness. If it isn't, wash it and squeeze it some more. If the bitterness cannot be totally removed (as is the case with most of the bitter leaves available in local market), parboil it for 10 minutes and then wash it in cold water.
Placed a clean pot in a low medium heat, add Palm and allow it to heat for 2 minutes, add the Crayfish, Salt and Maggi to taste.
Now add the Blended Pepper (Tomatoes, Red Pepper and Onions), then finally add the Stock and Smoked fish, stir together then cover and allow it to cook for 2 minutes.
The next thing is to add the fried fish, then stir together, cover and allow it to cook for another 2 minutes.
Remember that we've already parboiled the bitter leaves, so add them now, stir, taste, and season with additional salt if needed, then cover and cook for 3 minutes.
Remove it from the heat and serve with any of the five swallows: Eba, Fufu, Semo, Wheat, or pounded yam.
