Mustard Chicken Recipe and Load shedding
Well hello, stranger and fellow food lover
I wanted to share a yummy recipe that I received from I friend around a year ago. It was a cold rainy day and we were hard at work when he offered us leftovers. Now I'm a fan of leftovers, it's food that I don't have to make so jippy. So we each got a plate of warmed-up food. He didn't tell us what it was... But I know chicken when I see it. At first, I didn't like it, I'm not a fan of mustard... But after the first few bites, I fell in love.
I want to share the mustard chicken recipe with you all. I call it chicken mustard for some reason, it's more fun to say it switched up in my language "hoender mosterd". Truly I don't know why. The recipe is only for the chicken, but I like to add it to pasta. Everyone in my family loves it! Now it takes a bit of time, so I tend to only make it over weekends.

Ingredients
For the sauce
- 1/2 cup Suger
- 50 ml Mustard powder (If you only have mustard past, you can use it instead)
- 50 ml Cake Flour
- 2 ml Salt
- 20 ml Cooking oil
- 125 ml White Viniger
- 1 cup Mayonaise
- 1 cup Hot water
- Cheese
- Pasta of your choice
For the chicken
- 5-6 Chicken breasts
- 1 tsp Ground cumin
- 1 tsp Paprika
- Parsley
- 1 tbsp Lemon juice
What do you do?
Start with the sauce!
You have a few options here... Be a normal human, gather your ingredients and mix everything together in a large bowl... In the comfort of your kitchen.
Or if you live in South Africa, or just want to join in on the fun... Be mad at Eskom for sentencing us with load-shedding, gather your ingredients and tools, head outside, look like a weirdo and mix everything on the outdoor table.
1 - Start by adding all the dry ingredients to the sauce. The sugar, salt, cake flour and mustard powder.
1.5 Make a warm cup of coffee on the gas stove and wait for your husband to go buy oil since you forgot that you need it (I think this step may differ for some).
2 - Add the cooking oil and white vinegar to the dry mixture. It will form a clumpy texture, and this is completely fine.
3 - If you are mixing everything outside like me, head back inside... Get your handy load-shedding proof gas stove and boil 3 cups of water. 1 for the mixture and the other 2 for coffee.
4 - Full your trusty measuring cup with the mayonnaise. If you're like me, you would realise that just like the cooking oil, the mayonnaise was running low... Nevertheless, I got the cup full. Add the mayonnaise to the mixture.
5 - If you'd like, you can add a bit of cheese to the mixture. I try to make the sauce 2 hours beforehand since it needs to sit in the fridge for a while. I had to wait for loadshedding to go away, so my mixture was in the fridge for 3 hours.
Time for the Chicken!
Finally, our loadshedding curse was lifted (only for the day). So it is time to move on to the chicken.
6 - Cut the chicken into small bite-size cubes or strips. I like the cubs more 🤷♀.
7 - Add the chicken to a pan along with the ground cumin, paprika, parsley and lemon juice. We don't want to add too many spices to the chicken since the sauce will add flavour. But no one wants to eat boring chicken, so we do add spices.
8 - Cook the chicken until it is almost ready. We don't want it raw, but overcooking, it will make it dry. Add the sauce, turn down the heat and let it simmer.
9 - You want to sauce to thicken. By now your entire kitchen will smell like mustard and I promise you it will make your mouth water. If you're happy with the sauce you can take the pan of the plate.
10 - I think everyone is aware of how to make pasta. But just for laughs, I included the instructions on the back of Fatti's & Moni's. Get your pasta cooking and prep a large oven-safe dish. Remember to turn on the oven (at 180 celsius or 356 Fahrenheit).
11 - Ensure the pasta is cooked and mix it with the chicken and sauce. Add everything to the oven-safe dish.
12 - Top it up with cheese! You can place it in the oven and just keep an eye on it. Everything is already cooked, we just want it crispy and brown.
13 - You can convince your partner to make a salad, it serves as the perfect side dish. Thanks, @technicalside for being the salad slave.

Hmmmm.. Well honestly.. I hate mustard. I really do..
Id even eat a hotdog dry with just the bun before I add mustard or tomato sauce.
BUT!!!
This os definitely a meal worth eating... And somehow the mustard is more than delicious when added to the chicken😂😮
