Hola amigos, hoy como todos los días estoy agradecida por tener salud, una linda familia, un cálido hogar y muchos amigos. ❣️ Pensando en tantos bellos momentos y para celebrar la vida, especialmente en el día del amor y de la amistad preparé este rico almuerzo ❣️, se trata de una deliciosa pasta con guiso de costilla de res en salsa y además acompañada con batatas fritas. Así que con mucho amor aquí les comparto esta sencilla receta.
Hello friends, today like every day I am grateful for having health, a nice family, a warm home and many friends. ❣️ Thinking of so many beautiful moments and to celebrate life, especially on the day of love and friendship I prepared this delicious lunch ❣️, it is a delicious pasta with beef rib stew in sauce and also accompanied with fried sweet potatoes. So with much love here I share with you this simple recipe.
Ingredientes // Ingredients
- 1 Kilo de costillas de res
- 1 cebolla
- 1 tomate
- 4 ajíes
- Medio pimentón
- 5 dientes de ajo
- 1 zanahoria
- 2 batatas
- pasta corta
- orégano, adobo, sal y pimienta al gusto
- 1 kilo of beef ribs
- 1 onion
- 1 tomato
- 4 chili peppers
- Half a bell pepper
- 5 cloves of garlic
- 1 carrot
- 2 sweet potatoes
- short pasta
- oregano, adobo, salt and pepper to taste
Paso a Paso // Step by Step
First we clean the beef ribs, removing the excess fat and then we wash them with enough water.
Luego lavamos y picamos los aliños (tomate, cebolla, ajíes y pimentón) en cubos. Para luego ponerlos a sofreir en una paila que previamente hemos calentado con un chorrito de aceite.
Then we wash and chop the seasonings (tomato, onion, chili and pepper) in cubes. Then we fry them in a pan that we have previously heated with a drizzle of oil.
A medida que vamos removiendo los aliños le agregamos orégano, pimienta, adobo y sal.
As we stir the seasonings we add oregano, pepper, adobo and salt.
Seguidamente incorporamos el ajo y las costillas y vamos moviendo. Es importante mover con frecuencia para evitar que la carne se pegue al fondo de la paila o se queme.
Then add the garlic and the ribs and stir. It is important to stir frequently to prevent the meat from sticking to the bottom of the pan or burning.
Esperamos 10 minutos para agregarle media taza de agua, movemos y vamos viendo porque al ir secando debemos agregar nuevamente media taza de agua.
Las costillas de res son un poco duras y necesitarán aproximadamente una hora de cocción. Es importante no agregarles mucha agua desde el principio y recomiendo añadir agua poco a poco en varias veces, de esta manera lograremos que la carne se guise, agarre bastante gusto y no quede sancochada.
We wait 10 minutes to add half a cup of water, stir and watch because as it dries we must add half a cup of water again.
The beef ribs are a little tough and will need approximately one hour of cooking. It is important not to add too much water from the beginning and I recommend adding water little by little in several times, in this way we will achieve that the meat stews, gets enough taste and does not become boiled.
Ahora lavamos y pelamos la zanahoria, para posteriormente cortarla en cubos pequeños y la agregamos al guiso.
Now wash and peel the carrot, cut it into small cubes and add it to the stew.
Para cocinar las batatas procedemos así: lavamos las batatas, retiramos las conchas y las rebanamos para luego meterlas durante 5 minutos en un bol con agua y una cucharadita de sal (la sal evitará que las batatas se oscurezcan o se manchen). Luego escurrimos el agua y las llevamos a freír en una sartén con aceite caliente. Las batatas se fríen a fuego lento y tapadas para que queden suaves y con un hermoso color.
To cook the sweet potatoes we proceed as follows: wash the sweet potatoes, remove the shells and slice them and then put them for 5 minutes in a bowl with water and a teaspoon of salt (the salt will prevent the sweet potatoes from darkening or staining). Then drain the water and fry them in a pan with hot oil. The sweet potatoes are fried over low heat and covered so that they are soft and with a beautiful color.
Inicialmente pensé en acompañar estas costillas de res con arroz y batatas pero desistí de esta idea porque me percaté que tenía una pasta cocida en la nevera y lo que hice fue hervir un poco de agua con sal, le agregué la pasta y luego de unos 5 minutos calentándose la colé. Es pecado botar la comida y siempre debemos aprovechar las porciones que nos quedan de otros momentos.
Initially I thought of accompanying these beef ribs with rice and sweet potatoes but I gave up this idea because I realized that I had some cooked pasta in the fridge and what I did was to boil some water with salt, I added the pasta and after about 5 minutes of heating I strained it. It is a sin to throw away food and we should always take advantage of the portions we have left over from other times.
