On the contrary, there are people who for them it is a charm to include vegetables in their daily diet. It is for the vast majority to recognize the vitamins and minerals that each vegetable offers when consumed.
Today I share cooked vegetables that we purchase weekly or biweekly to complete our daily meals. On this day I included: broccoli, eggplant, carrots.

La mitad de un brócoli grande, aproximadamente 1/2 kilo
1 zanahoria mediana
1/4 de cebolla morada
Perejil al gusto,
1/4 de cucharadita de sal
1/4 de cucharadita de cúrcuma
1/4 de cucharadita de orégano
1 pizca de pimienta de cayena, me gusta porque da un sabor muy delicioso (no excederse)

Cut the eggplant as you prefer, in this case it was cut into cubes, took it to a container, put a little salt and water to soak for a few minutes.

Cut the carrot (as you prefer), red onion and parsley, put it in a frying pan over low heat covered for a few minutes so that the steam generates liquid.
After a few minutes, add the eggplant, cover and let it cook with the steam.

In the meantime, wash the broccoli very well, cut it in small pieces, its small shoots as small as possible. Wait until the eggplant is cooked, very soft.
Add the broccoli, add the oregano, the salt and the curcuma, everything is united so that it takes the flavor of the spices that were used, stir it very well... cover it for a few minutes, while the broccoli cooks a little.

Once the cooking process is finished, it is served, ready to eat.
It can be served with the meat of your choice. Or simply, just vegetables.
Delicious for lunch or dinner and as you prefer to accompany it.
