Zucchini - Bacon Scrambled Eggs & Shrimp Pasta with Spinach
Hello my dear friends. I started my day by preparing breakfast. This time I made eggs but in a slightly different way. Recently I’ve started adding zucchini and I really like it. it turned out quite delicious. If you haven’t tried it yet, I highly recommend it.
I love zucchini and I think it’s something that should be used everywhere. I also added a bit of bacon, onion, garlic and tomato.
I seasoned it with some salt and black pepper. You can sprinkle cheese on top to make it even tastier. I would have liked to add some green onions as well, but I forgot, though it would have been really nice. I really love eggs with green onions.
Lately we’ve been having some issues with water at home. They brought new water, but the bottle had a crack at the bottom and it was leaking. At first we didn’t notice, but then we saw the laminate flooring starting to swell and it became quite a problem. So I came up with this solution and ordered these trays. Originally I wanted something like a support. Sometimes people ask, Why do you need all this? Are you still ordering water in bottles? We have a water filter, but honestly I don’t trust it that much. I don’t think the water from this filter is safe for food use. The water is really dirty, it comes out yellow, so I can’t use it for cooking. Now I’m thinking about setting up a more serious filtration system. Maybe we should get a higher-quality filter, like a reverse osmosis system. But it might be difficult to find space for it in the cabinet. I’m not sure, we need to think it through. Maybe we’ll set up a serious water purification system to avoid such problems. Of course, this might look a bit primitive, but what can we do? It’s definitely better than the laminate getting damaged.
And there’s also the pump .We’re using the old one because the new one we bought only worked for a week. My neighbors had warned me that these pumps don’t last long. Yes, it broke I returned it and they accepted the return. Now we’re using the old pump, which collects water in a basin.
My husband came back with the groceries. As usual he brought milk – 3 cartons of milk, sour cream, cucumbers, onions, dill, parsley, green onions, fruit and tomatoes. He also brought a very soft plum. Then he got white cheese, as I plan to make cheese-filled pancakes for breakfast tomorrow. He also bought a hard cheese. At first I thought it was parmesan, but he said it’s a homemade hard cheese, similar to parmesan. We’ll try it and see. He also bought some vegetable oil with a lovely scent, which we really like.
After that I unpacked and washed everything. Yesterday, we were supposed to go out and take some photos, but we postponed because of the weather. It got really cold and it started raining. The shoot was supposed to be on the beach and my husband said that without sunlight, the river would look gray and the photos wouldn’t turn out well. He also mentioned that it was very windy. There was a little sun in the morning, but by the evening, the sky was completely overcast.
We had to reschedule. My daughter and I did some painting instead. I like to do painting with the kids when I find some free time, it’s really fun.
Also one of the curtain hooks in the living room broke. It seems like all the bad luck came at once. It’s not possible to attach the new hooks to the tulle because the holes at the top of the curtain are on the other side due to the air conditioner. So, in order to put the hooks on, I have to completely remove the curtain. I hope I explained it well. Since I had to completely take the tulle down, I of course washed it, but before washing, I removed the hooks. It is possible to wash them with the hooks, but in the kids room, I noticed that there were some snags on the tulle and I realized they had formed over time. I spoke with the store where we ordered the curtains about it and they said that the hooks can cause snags on the tulle, so it's better to remove the hooks before washing. So, I took them all off and within a few minutes, everything was ready. The tulle looks much better without any snags. It's always better to eliminate all risks.
After washing I put the hooks back with the help of my daughter and I noticed that I have spare hooks. I found many spare hooks and these are a bit different, more transparent. The hooks I took off before were whiter. This time I put on the transparent ones, hoping they won’t break. The other hooks were given as a gift from the curtain shop where we bought our curtains and they seem a bit weaker. In the kids room, everything looks great, we haven’t had any issues and there’s no need to worry about snags.
I moved on to preparing dinner. I decided to make something really delicious: shrimp. These are very big, so I cut them in half. I started boiling water for the spaghetti, grated spinach and cheese and prepared cherry tomatoes. So, I made pasta with shrimp, spinach, cherry tomatoes and a cream sauce. I also used garlic.
I started by quickly frying the shrimp. I salted them and added garlic and basil. Then I added the spinach. The spaghetti was already boiling. Once the spinach softened, I added the cherry tomatoes and cream and after sautéing a bit, it was ready.
