Easy Tart, Shopping and Delicious Peach and Ricotta Pie Recipe

Hello everyone, dear friends. I started the day by preparing breakfast. I made a cheese tart. It could actually be called a lazy khachapuri. I've made it many times before, but I don't think I've shared this recipe with you. I will now show you everything I traditionally do. It's quite easy and simple to make. It requires three eggs and about 80 grams of flour (sometimes I add a little less). I do everything by eye. About 100-150 grams of cheese is also needed. here I have classic hard cheese and I also added some lightly salted cheese. I added a tablespoon of sour cream as well, but not too much.

I cracked the eggs, added some salt, then added the sour cream and mixed it. After that I added the cheese. I can always get the consistency right by eye. For seasoning I add salt and sometimes basil; Provence herbs also pair very well. I lightly greased the pan with some melted butter and once it heated up, I poured the dough in. I closed the lid and cooked both sides on low heat until golden brown, for about three minutes. When the tart was ready I sliced it and we started breakfast. They were so delicious.

Now let me tell you about some new items I received. A large package arrived. It contained kitchen textiles, things I've liked for a long time and loungewear for both me and the kids. I got many beautiful and interesting products from the Rid online store. Let me start with the clothes for the kids. I bought this pajama for my daughter. A long-sleeved top, perfect for cold weather, with a unicorn on it. The fabric is very soft and gentle and there are also unicorn-patterned leggings. I got it in size 6 for my daughter, she's tall, but this pajama will fit her very well.

Next there is something new for my other daughter, a four-piece set. This is actually a pajama, but my daughter will wear it as casual clothes at home. There is a design on the back of the t-shirt that says something. I didn't notice it when I ordered, but it was a pleasant surprise and looks very nice. I'm very happy with all the items that came in terms of quality. This set is very cute and elegant for Alina to wear at home. There is a light pink tank top and two shorts, one has a floral pattern, the other is green. For example, they can be combined as a tank top and shorts.

Lastly I ordered this porcelain oil dispenser. I've been wanting to replace our old wooden and plastic lid oil dispenser for a long time. This one is the perfect size for me. Some are too large, but this one is just right. It's very useful for oil because the top is high, so we can easily store homemade, round-shaped oils. The old one had cracked and gotten dirty, so it was time for a replacement.

One of the textile items I mentioned is this beautiful bedding set I bought for my daughter. The pillowcase has lace details and it's really amazing. The set is sold in parts: a separate sheet, duvet cover and pillowcase. The phone camera shows it a bit lighter, but it's actually more of a powder pink shade. The fabric is cotton, very nice and soft. I absolutely loved these pillowcases. And I bought another bedding set of the same kind because small-sized sets aren't available in the store. I'll take it to the tailor to have a duvet cover and pillowcase made to fit my daughter’s bed from this larger set. Also, two small sheets will be made from my daughter’s sheet. This way the girls will have matching bedding sets with the same pattern on their beds.

Now I will share my recipe for a canned peach and ricotta pie. It was my first time making it, but it turned out so delicious. Here's the recipe: For the dough, I used 2 cups of flour, 4 tablespoons of sugar, 1.5 teaspoons of baking powder, a pinch of salt, 2/3 cup of butter, 1 egg and 1 tablespoon of sour cream; for the filling, I used 2 cups of ricotta cheese, 3 eggs, 8 tablespoons of sugar, 1/4 cup of milk, 4 tablespoons of cornstarch, 1 packet of vanilla and 1 cup of chopped canned peaches.

I sift the flour, add sugar, baking powder and salt and mix. Then I add the cold butter and blend it in using a blender to crumble the mixture. After that I add an egg and sour cream and knead the dough. I divide the dough into two parts, putting the smaller part in the fridge. After spreading the larger part into a baking pan, I start preparing the ricotta filling. For the filling, I add sugar, milk and cornstarch and mix it with a blender.

I chop the peaches into small pieces and add them to the filling mixture, then whip the egg whites and fold them into the ricotta mixture. I bake it in the preheated oven at 170°C for about 50 minutes.
