Today I bring you a delicious dish, a typical food from my beloved Venezuela, the mondongo Guisado also known as cayo is very tasty, with a different texture and requires cooking time, a dish that no one can resist.
1 1/2 de Mondongo.
3 Papas.
1 Cebolla Mediana.
10 Ajíes.
Orégano.
Sal al Gusto.
Caldo de pollo.
INGREDIENTS
- 1 1/2 of tripe.
- 3 Potatoes.
- 1 medium onion.
- 10 Peppers.
- Oregano.
- Salt to taste.
- Chicken broth.
The first thing I did was to wash the tripe very well, normally it is washed with lemon, this time I did it with plenty of vinegar because I did not have lemon at the time, I left it for an hour with vinegar then rinse it with plenty of water, and being ready I proceeded to add salt and oregano to place it on the fire for about an hour.

While the tripe softens, I wash and chop the vegetables.
After the cooking time has elapsed, I turn off the heat and let it rest for a few minutes, remove the tripe and reserve the broth for the stew, once it has rested I chop it into small squares.

Having all the ingredients cut, let's start with the stew.
First I start by placing a pot on the fire and add a little onoto and add the seasoning and seasoning with a little chicken broth, oregano and a few cloves of garlic well crushed, and being well fried I add the broth that I had already reserved.
Una vez teniendo todos los ingredientes añadidos cocino por unos 10 minutos, y le agrego las papas.
