MTN rice (vegan) recipe

MTN rice! From the title you may have wondered what rice is called MTN rice or you might be familiar with it if you're Nigerian. You might also know that another name we call it is Red oil rice.
I recently decided to make a veganized of a Nigerian classic we fondly call "MTN Rice."

Why this rice is called MTN rice is because it is yellow in color after cooking. The network provider, MTN, is known for their bright yellow brand color, this rice dish is traditionally rich, yellow, and flavorful. It brings warmth to the table, and with a few plant-based tweaks, I was able to keep all its essence while making it vegan-friendly.

Recipe for Vegan MTN Rice

All ingredients used for this rice are plant based and quite natural. Below are the few ingredients I used for it:

Ingredients

  • 2 cups of rice
  • 2 medium sized onions
  • 1 fresh ginger
  • 1.5 cooking spoon palm oil
  • Salt to taste
  • Pumpkin Vegetable
  • 1 tablespoon dried pepper

Steps to Prepare

  • **I started by rinsing the rice thoroughly to remove excess starch and prevents it from getting sticky. I then added the rice to a pot of boiling water to let it parboil.

  • While rice was boiling I cut the onions, ground the ginger and washed and sliced the vegetable.

  • Soon the rice was done parboiled, I sieved the water. Put a pot to heat and added palm oil to it

Next I added onions to it and sauteed

Next I added the pepper and ground ginger to it and stirred gently and properly to mix

Next I added 1 cup of water to it and stirred

Next I let the water boil and then added the rice to it, stirred gently to mix well. Then covered the pot to let it cook down

Once the rice is tender and fully infused with flavors, I add the vegetable to it

I cover the pot to allow the vegetable to cook down for a few seconds. Then I have my rice ready to be served

And I served in a plate for my siblings and I to enjoy.

It was exactly how I wanted it. Delicious and nice looking....The color itself is inviting! I must say this is my favorite type of rice, very simple yet super delicious.
