Scrumptious Speedy Stir-fry
Stir-fry has often saved me from landing in a pickle - not literally, but I'm sure you know what I mean ;)
I'm sure the cooks and chefs know the scene; you're late with meal preps and everyone is looking at you with hungry eyes.
Not being a morning person whose mind only starts functioning late afternoon, means that I often start too late with my bnb admin, and before I know it, the sun is starting to go down, and it's that time of the day again!
It doesn't help when your man is an insulin-controlled diabetic who needs meals at regular times, or else he has a hypoglycemic episode, not nice for him, or the rest of the family, as anyone who's ever gone through a low-sugar reaction, knows.
Stir-fry to the rescue...once again!
I do plan my meals carefully, dependent on my duties and stir-fry is one of the quick and easy meals I make.
Fresh vegetables...
- Sliced Onion
- Sliced Red Bell Peppers
- Sliced Mushrooms
- Crushed Garlic
- Green Chili
- Shredded Red and White Cabbage
- Julienne Carrots
- Diced Spring Onions
- Diced Spinach
- Grated Ginger
- Sprouts
You can use any other vegetable you have on hand; the green grocers have packs of stir-fry mixes which makes the job even easier.
I usually add...
- Sliced Chicken fillets
- 1 can smoked Oysters
OR - Marinated thinly sliced Steak
Vegans can stop right there, only need to add their own seasonings, I add Soy Sauce and Sweet Chili Sauce.
Now the stirring begins - do it in small batches if you are making a large quantity.
Heat Olive oil in a wok or large frying pan, add Onion, Bell Peppers, Garlic, and Chili till onion starts to caramelize.
I remove this from the pan while stir-frying the Mushrooms.
Note - you can simply add mushrooms when adding the remaining vegetables to the onion mix, but the real flavour of the mushrooms comes out when stir-fried on its own.
You will need to add more Olive Oil from time to time.
Add onions back into the pan, then add Cabbage, Carrots, Spring Onions and Spinach and keep on stir-frying.
I added extra mushrooms to the vegetables.
Add Ginger, Sprouts, and seasoning, stir gently, and spoon into a large dish.
Using the same pan, heat Olive Oil to almost smoking hot, add meat, and stir-fry for a short while only.
Add Soy Sauce and Sweet Chili Sauce - or any sauce of your choice.
Add to vegetables, and mix lightly.
Serve on noodles or rice for a really delicious meal, ready in no time at all.

Love a stir-fry! It is a winner for a fast meal. Especially when there are unexpected guests. It always tastes different and can be made with whatever is available. Sprouts and oyster mushrooms are yummy!
