Sandwich Seasons
I can think of three sandwich seasons in my life;
- a school-going child
- a Mom making sandwiches for my two boys
- in my Silver years making sandwiches for BnB guests
School lunch break sandwich memories
Memories of Mom's freshly baked bread as I walked into our home after getting off the school bus, came flooding back when a discussion between the team behind Silver Bloggers led us to make Sandwich Memories the topic for this month's #bom - Blog of the Month :)
I had four brothers and friends would come over after school to play rugby in the backyard. My little brother was always coerced into making them coffee and giving them thick slices of hot bread. Of course this meant that Mom baked fresh bread every day while we were growing up!
This is the whole process of making bread - how my mother did this every day, still beats me!
First the kneading, then the bowl would be wrapped in an old tablecloth, placed in a sunny spot to prove, knocked down and placed in a bread tin till it's risen enough for baking.
This was my latest bread making session; there was enough dough left-over to make two breadrolls.
The phrase below by Nataniel, an eccentric South African entertainer, is quite apt for those who claim they hardly eat anything :
My grandma used to say that every time you tell a lie, the truth has to go somewhere; and it's usually to your hips!

Some mornings, there would not be enough bread leftover for school sandwiches, but my inventive Mom who could make something out of nothing, would always come up with a plan.
Crumpet sandwiches for school - a real treat!
She would whip up some crumpets in no time - some call them flapjacks, and sandwich them together with cheese and apricot jam - still my favourite!
The only image I could find is one that shows the ingredients for making a Crumpet Sandwich.
The second image is a crumpet stack that I made for @jaybird's Sandwich Contest a long time ago. Mom's sandwich of course would only use two crumpets, sandwiched with a filling inside!
Another favourite was Vetkoek - a different kind of sandwich
Another lifesaver Mom would make in a flash is Vetkoek (literal translation - 'Fat Cake'). This deep-fried kind of savoury doughnut is usually made with bread dough, but on mornings like that Mom would make a quick dough mixture using baking powder. The Vetkoek would be split and filled with leftover savoury or curried ground beef.
This is another memory of that same old contest.

I've never been a morning person, so this is not my favourite pastime in the kitchen, a place I love any other time of the day; but a gal has to do her bit, whether it's for the kids or the guests who fortunately do not often ask for packed lunches as it's a good excuse to buy takeout junk-food!
Smoked Ham, Cheese & Tomato is one of the easiest sandwiches; I've used my homemade bread.
...and almost did the unforgivable, nearly forgot to add the mustard!
Mom often lined the lunch tins with foil, sometimes lettuce as well to prevent the sandwiches from drying out. These sandwiches are ready to be packed.
A fruit and a treat was always a nice surprise, with a juice added. This of course is what the packed lunches for our BnB guests look like, although I mostly use bread from the supermarket bakery - sandwiches being the main feature!

It's lovely memories indeed, you won't believe what my brothers spent some of their pocket money on...half a loaf of shops bought bread...yep light & fluffy white bread🙃😅
