Pescado relleno, para seis porciones
Stuffed fish, for six servings
Ingredientes:
3 Pescados (usamos conijoas de unos 500 gramos cada una);
2 cebollas medianas;
250 gramos de ajís dulce;
Color;
Sal al gusto;
Aceite; e
Hilo.
Ingredients:
*3 fish (we use conijoas of about 500 grams each);
2 medium onions;
250 grams of sweet chili peppers;

Salt to taste;
Oil; and
Thread.
Preparación:
Se toman la cebolla, los ajíes y se cortan finitos, luego se colocan en un sartén para sofreír, se les coloca colorante natural (onoto), y sal al gusto. Cuando los vegetales estén salteados (se ponen casi transparentes), se retiran del fuego.
Preparation:
Take the onion and the peppers and cut them finely, then place them in a frying pan to sauté, add natural coloring (onoto) and salt to taste. When the vegetables are sautéed (they become almost transparent), they are removed from the fire.
Mientras los vegetales están en la sartén, tomamos los pescados y los abrimos en la manera que aparece en la foto, con el fin que reciba el sabor de los vegetales salteados.
While the vegetables are in the pan, we take the fish and open them as shown in the photo, so that they receive the flavor of the sautéed vegetables.
Se toma una sartén, donde quepan los pescados, y se pone a calentar a fuego medio con un poco de aceite, para que los pescados no se peguen a la sartén y se rompan.
Take a frying pan, where the fish will fit, and heat it over medium heat with a little oil, so that the fish do not stick to the pan and break.
Seguidamente se toma el pescado, se le coloca sal alrededor, y se les introducen los vegetales salteados. Una vez introducida toda la preparación en los pescados, se amarran con hilo fuerte.
Then the fish is taken, salt is placed around it, and the sautéed vegetables are introduced. Once all the preparation has been introduced into the fish, they are tied with strong thread.
Una vez rellenos los pescados, se colocan en la sartén ya preparada colocándole una tapa para que no se escapen los sabores ni los olores. Se dejan dorar un rato y se voltean para que doren por ambos lados. Una vez listos por ambos lados, los sacamos de la sartén, los servimos y a disfrutar de este rico plato.
Once the fish are stuffed, they are placed in the prepared frying pan with a lid so that the flavors and smells do not escape. Let them brown for a while and turn them so that they brown on both sides. Once ready on both sides, remove from the pan, serve and enjoy this delicious dish.
