It Is Been a While Since I Cook Chicken Afritada
It has been a while since I cooked Chicken Afritada, if chicken is the main ingredient of the day they always wanted me to cook adobo which I love too but since my mom bought tomato paste and spaghetti sauce Chicken Afritada is the one recipe that is always on my mind I am a little bit confused about the name of the dish because here in the Philippines we have dishes that this day always debate the difference between the famous Mechado, Menudo, Caldereta LOL I know some of you relate to this.
Ingredients I Used:
- 1 Kilo of Chicken
- 5 cloves of garlic
- 1 medium red onion
- 1 cut small ginger
- 3 small potatoes
- 1 medium carrots
- 1 half medium bell pepper
- 6 tbsp of cooking oil
- half tsp of chili powder
- 2 tbsp milk/cheese
- 1 chicken cube
- 2 tbsp of fish sauce
- 250 g of Italian tomato sauce
- 1 tbsp of tomato paste
- 1 tsp of brown sugar
- 4 cups of water
Cooking Time!
In a hot pan, I added 4 tablespoons of cooking oil.
Fry the potatoes until the sides lightly turn brown. Then after that, I set it aside.
In another pan make sure it is hot, I added 2 tablespoons of cooking oil
Next, I sautee the chicken cuts until the chicken some part turns crispy brown.
Then I added 2 tbsp of fish sauce in and mix until well combined.
And then I added 250g Italian-style spaghetti sauce.
Then I added 1 tablespoon of tomato paste to make the dish thick and to make this beautiful appetizing color.
Then I added 4 cups of water and mixed until the tomato sauce and paste diluted.
To make the dish more flavorful I added 1 chicken cube.
After that, I added just a teaspoon of brown sugar to balance the taste.
I let it cook for about 5 minutes.
To make the dish creamier I was supposed to add cheese but we ran out so I added 2 tablespoons of milk instead. Let it cook for a minute.

Gosh, that color, that's the real color of Afritada. Iba talaga kapag ginagamitan ng tomato paste and sauce. Samin kasi ketchup, hahaha. Mama used to make this too when she has her eatery pa. Huhu. Kakamisssss. Meron paba? Pahingiiii 🤤🤤🤤✨

This is one of the dishes that we don't know how to cook. Being an Igorot and growing in the mountains of Cordillera, we usually don't use many spices on our food. It's just recently na natuto kmi (sa pamilya) na magluto using different spices.
Reading and looking at how you did your afritada, parang it's so easy to do. I hope I get the chance to try your recipe.
You should try to cook it madaling lang talaga siyang lutuin. 😄
