(ENG-ESP) Exquisite and crunchy potato croquettes stuffed with mozzarella cheese and bacon

Good evening dear friends, welcome back to my blog. The recipes I enjoy the most are the ones that have an appetizing and delicious "crunchy" texture. I had long wanted to prepare again some exquisite "potato croquettes stuffed with bacon and mozzarella cheese". They can be complemented with an infinite number of toppings: mixed salad, baked plantains, steamed rice, yucca. I thought it was great to accompany my succulent croquettes with a "yogurt, pepper and mint sauce". Let's put on our aprons and start our wonderful process.

Buenas noches queridos amigos, bienvenidos de nuevo a mi blog... Las recetas que MÁS disfruto son las que poseen una apetitosa y deliciosa textura "crujiente". Tenía tiempo deseando preparar unas exquisitas "croquetas de patatas rellenas con queso mozzarella y tocineta". Pueden complementar con infinidad de contornos: ensalada mixta, plátanos horneados, arroz al vapor, yuca... Me pareció genial acompañar mis suculentas croquetas con una "salsa de yogurt, pimienta y yerbabuena". Pongámonos el delantal y comencemos nuestro maravilloso proceso.

  • To make this recipe I used 3 large potatoes. Add enough water to a deep pot, add 1 teaspoon of salt, when it comes to a boil add the potatoes. Cook for approximately 40 minutes or until they are tender. I suggest cooking with the skin on.
  • Para realizar ésta receta utilicé 3 patatas grandes. Agregamos suficiente agua a una olla honda, colocamos 1 cucharadita de sal, cuando rompa el hervor integramos las patatas. Cocinamos aproximadamente durante 40 minutos o hasta comprobar que se ablandaron. Les sugiero cocinar con la piel.

  • While waiting for the cooking time, we sauté the bacon (finely chopped), cook until golden brown all over. For this recipe I like the texture of the bacon to be a little "crispy".
  • Mientras esperamos el tiempo de cocción, sofreímos la tocineta (finamente cortada), cocinamos hasta que se doren por completo. Para ésta receta me encanta que la textura de la tocineta esté un poco "crujiente".

  • With the help of a fork we mash the potatoes, add a touch of milk, I particularly like to leave some pieces of potatoes to enjoy a slightly rustic consistency. We add pepper, in this step we can adjust the salt point.
  • Con ayuda de un tenedor trituramos las patatas, añadimos un toque de leche, particularmente me encanta dejar algunos trozos de patatas para disfrutar de una consistencia un poco rústica. Añadimos pimienta, en éste paso podemos ajustar el punto de sal.

  • To enjoy a VERY tasty and delicious flavor, we integrate: basil leaves, celery and garlic powder (1 teaspoon).
  • Para disfrutar de un sabor MUY sabroso y delicioso, integramos: hojas de albahaca, célery y ajo en polvo (1 cucharadita).

  • Next, add abundantly and generously the mozzarella cheese. Mix until well integrated.
  • A continuación, añadimos de forma abundante y generosa el queso mozzarella. Mezclamos hasta integrar bien.

  • With the help of a spoon we assemble our spheres, trying to have a similar size. We coat them with a mixture of wheat flour, to which we previously add seasoned salt and dry oregano.
  • Con ayuda de una cuchara armamos nuestras esferas, tratando de que tengan un tamaño similar. Rebozamos con una mezcla de harina de trigo, a la que previamente añadimos sal condimentada y orégano seco.

  • Fry in plenty of sunflower oil until golden brown on both sides and VERY crispy!
  • Sofreímos en abundante aceite de girasol, hasta que se doren por ambos lados y queden MUY crujientes!
