Red curry with chicken and glass noodles from a papaya in the home garden and other food from a papaya my wife cooked.
Hello everyone. How are you today? I hope all is well with you and your family. There are a variety of dishes made from papaya. I've shared papaya dishes that my wife makes in my old posts, such as papaya salad and clear soup with papaya. And in this post I want to share another dish made from papaya that my wife made with everyone. This dish is a red curry with chicken and glass noodles. We also have some ingredients from the home garden for this dish. All fruits and vegetables in the home garden are chemical free. And in our home garden there are many papayas bearing fruit. But my wife only wants one papaya.

Additionally, there are spring onions, culantro and kaffir lime leaves in the home garden for this dish.

First peel the papaya and chop it.
Crush the shrimp paste, shallots, garlic and dried chilli using a pestle and mortar to make curry paste.
Put a pot on the stove and heat the oil. Then add the curry paste to the pot and stir-fry until cooked and fragrant.
Then add the chicken in a pot and stir-fry the chicken with the curry paste until the chicken is cooked.
Then add water in a pot and boil until the water boils.
When the water boils, add the choped papaya and kaffir lime leaves to the pot. Boil until the papaya is cooked.
When the papaya is cooked, add the glass noodles, spring onions and culantro to the pot.
Boil for a while until the glass noodles is cooked and turn off the stove. Done, red curry with chicken and glass noodles.
Additionally, my wife also makes papaya salad from this papaya.
