Rajma and Jeera Rice - Freezer Challenge Day 2
I was in the kitchen for about 15 minutes today getting my dinner ready. An advantage of having a pre cooked meal in the freezer. It almost feels like I had food delivery today. I had more of the evening to myself. And this is one of the main reasons why I prep and freeze meals.
Now, maybe you think that the texture of the food changes, when it has been in the freezer. I agree with you, the texture of some food does change. It does not change the flavor of the food though. However, this meal there is no change in texture nor taste.
I remembered to take out the Rajma curry late afternoon today. Rajma curry is a kidney bean chili of sorts. It is soaked and boiled kidney beans cooked for about an hour in sauted onion, tomatoes, chili powder, cumin powder, coriander powder, garam masala, salt and lots of butter.
By evening, I noticed, it was not completely defrosted, and I knew I would be hungry in sometime, so I put it in a clay pot and boiled it well until my Jeera rice cooked. Nobody has to know right. It is all fine in the end.
A clay pot is one of my favorite pots to use while cooking. It is almost like the cast iron pots and pans, but not as heavy. The clay pots have to be seasoned regularly as well.
For Jeera rice (Cumin rice), I tried my cheat recipe today. I added 1 cup rice in a pressure cooker, 2 cups of water, salt, cumin, cardamom pods, cinnamon stick, cumin seeds, ghee (clarified butter) together and let it cook for 2 whistles. Tastes amazing.
