Food experiment: Fried eggplant with egg

Being a mother is not an easy responsibility, not an easy job because you will not just bear a child for 9 months in your womb but you need to mold their character to be a good person, you need to teach them the basics of life, you need to guide them and a lot more than that.

Being a mother you also need to provide and prepare nutritious food for the family. Thinking what to cook, what to prepare every meal is one of the challenging task of a mother. Will you agree on that?

The advantage of this challenge is that, mothers will become creative, mothers will become resourceful, mothers will learn to experiment with different recipes to provide for the family.

For today's blog I will share with you a food experiment I just tried recently - FRIED EGGPLANT WITH EGG.

One morning while I am thinking what to prepare for breakfast, I checked what we have in the kitchen. We have some eggplant and egg. I want to cook fried eggplant and fried egg with some spring onions and they are both so easy to do BUT why not make an experiment? I want to try something new and I want to combine them to make a one recipe.

Without further ado, let's go.


INGREDIENTS


3 pieces eggplant
2 pieces egg
Spring onions
Salt
Cooking oil


PROCEDURES


Step 1. Wash the eggplant and let it dry.

Step 2. Slice it thinly into four parts and make sure that they are still connected to each other.

Step 3. In a plate or bowl beat the two eggs.

Step 4. Cut the spring onions into a small ones and add it to the egg. Add salt to taste. You can also add other seasonings according to your preferred taste.

Step 5. Get the sliced eggplant and dip it into the beaten egg with salt and spring onions.

Step 6. Heat the pan, add enough cooking oil for frying and let it boil and fry the eggplant with egg.

Step 7. Turn upside down when it turns to a light brown. Don't overcook it so it won't taste bitter.

Step 8. Our fried eggplant with egg is now ready. You can serve it with your favorite sauce or catsup.

It is so easy like 1-2-3 right? For a few minutes you can have a delicious and nutritious recipe for breakfast. I love it and so my son. I hope you will love it too.

*This recipe is really good for breakfast not just because it is easy to prepare but it is also packed with beneficial protein, vitamins, minerals, antioxidants and fiber which is really good for our body.

lasagna is a meal where you use layers, in this case of eggplant and fill it with the stew you like best.

I love eggplant :) I'm sure it turned out delicious this way. I prepare it like this but coating it with breadcrumbs and then frying, it is also very delicious ❤️

Wow! Another idea came while reading this. So after dipping it on egg,you will also dip it on the bread crumbs and fry? Hmmm I will try it someday.
