I Prepared Chicken Afritada and Pork Adobo When I was Pregnant

I've been writing about my pregnancy journey in the past few days and I found a few photos I cooked and prepared when I was pregnant. I was in the Philippines when we learned that we were pregnant. I stayed in the PH while my husband was back in his country.

My first pregnancy was not critical so I really felt good during the whole pregnancy. I commute alone to see my doctor for monthly checkups. I had fun going on a food trip. I never asked anybody to accompany me. My relatives and sister were surprised I'd been almost everywhere during my pregnancy. They were worried that something might happen to me while traveling alone.

Anyway, here are the foods I cooked and prepared when I was pregnant:

Chicken Afritada

Many times I said that I am not a good cook but I really tried to cook and it turns out it tastes so great. Haha! Living in my hometown, the local market was very accessible so I could buy any ingredients any time of the week.

I was curious about how to make Chicken Afritada. I made it as simple as possible.

  • Saute the onion, and garlic, and add the chicken parts for 10 minutes
  • I added the diced carrots and potatoes until cooked
  • Add the tomato sauce, and sprinkle it with salt and pepper
  • Add water to your liking for the thickness of the sauce
  • Simmer it for 30 minutes as long as the sauce won't evaporate
  • We just make sure that everything is cooked with the sauce
  • Serve the Chicken Afritada with white rice

As a pregnant woman, OMG, I felt so satisfied and very happy that I prepared a basic Chicken Afritada. I shared this with my sister and she loved it.

Pork Adobo

Many times I featured Pork Adobo on Hive. My family here in France loves the Pork Adobo.

Usually what I do:

  • Cook the cut pieces of pork in oil until crispy brown
  • Set aside the cooked pork
  • Saute onion and garlic
  • Next, put in the cooked pork
  • Pour in soy sauce, vinegar, Sprite soda for the sauce
  • Check the taste as per your liking
  • Put in the laurel leaves
  • Simmer for 45 minutes to 1 hour
  • Sometimes we cook this for 2 hours just to make sure that it is well-cooked.
  • Serve pork adobo with white rice

Yes, I was very happy with my home-cooked meals when I was pregnant. The more I cook, the more appetizing the food is.
