Weaning Ourselves Off the Franken-bread

The bread we get at the local market has its good properties, it doesn't go moldy or stale very quickly, we can store it (pre-sliced) in our pantry for a long time and it tastes good.

But this fake bread is not real bread. It doesn't have wheat-berries in it anymore. All the components of the wheat berries are separated, sifted, "fortified" and bleached into common "white" flour which has become oxidized. Then this "white" flour is added with binders and high-fructose corn syrup, preservatives and sometimes some wheat-brand to make it seem healthy. Then they are baked into loafs and called "bread". It might be "wonderful", but it's not REAL bread.

REAL Bread

Our family is transitioning from "wonder" bread to real home-made bread. It doesn't have all the attritubes of the fake stuff, but it is still a much better option. We have to eat it right away because REAL BREAD will get stale within hours, REAL BREAD will get moldy within a few days, we cannot store REAL BREAD long-term and we have to slice REAL BREAD ourselves.

But it's all worth is for one simple fact: it's REAL bread. The taste and nutrition is SUPERIOR to "wonder" bread.

Storing Wheat Berries

Unlike flour that oxidizes, wheat berries can last for many years, preserving all the original nutrients and flavor. The wheat berries can be used in a variety of ways, but milling them to a fine flour is perfect for making fresh bread.

We put the wheat berries in our WONDERMILL and create fresh virgin flour. Milled same day as a part of the bread making process.

We use the flour with basic bread-making ingredients to make two simple loaves and bake them in the oven.

The End Result?

What comes out of the oven as warm and soft home-made bread, from the berries to the loaf. The flavor is exquisite and somehow "addictive". There's a slightly nutty flavor and the texture is soft and chewy with a tiny bit of a grit (in a good way) sort of like corn bread.

Far, far superior to store bought plastic wrapped bread. Much healthier and tastier too!
