Pastel de atún con tajadas de plátano / Tuna pie with plantain slices
Greetings friends! Today I share with you a recipe that is popular in eastern Venezuela, specifically in the state of Nueva Esparta, Margarita Island, the "Chucho Pie", however I made a modification because Chucho is the Whitespotted eagle ray, a kind of stingray that it is threatened by overfishing, so let's not contribute to its extinction. So I substituted that fish for tuna and the pie was very tasty.
Vamos de inmediato a ver los ingredientes que se necesitan para prepararlo:
Let's immediately see the ingredients that are needed to prepare it:
- 8 plátanos maduros
- 1 kg de atún fresco
- 3 cebollas
- 1 manojo de cebollín
- 1 pimentón rojo
- 1 puñado de cilantro
- 1 rama de ajoporro
- 8 ajíes dulces rojos
- Una cucharada de alcaparras
- Aceite onotado
- 4 huevos
- 200 gr de pan rallado
- 5 dientes de ajo
- 250 gr de queso blanco duro
- 200 gr de papelón
- Mantequilla para el molde
- 8 ripe plantains
- 1 kg of fresh tuna
- 3 onions
- 1 bunch of chives
- 1 red pepper
- 1 handful of coriander
- 1 sprig of garlic porro
- 8 red sweet peppers
- A tablespoon of capers
- Onoted oil
- 4 eggs
- 200 gr of breadcrumbs
- 5 garlic cloves
- 250 gr of hard white cheese
- 200 gr of papelon (sugar cane panela)
- Butter for the mold
Preparación / Preparation
Sancochamos el atún por unos 15 minutos o hasta que veamos que se torna blanco y el tenedor lo atraviesa fácilmente. Luego lo sacamos del agua, dejamos que se enfríe y lo desmenuzamos.
Boil the tuna for about 15 minutes or until we see that it turns white and the fork goes through it easily. Then we take it out of the water, let it cool and crumble it.
Ponemos aceite onotado en una sartén grande y cuando esté caliente echamos las cebollas, ajíes dulces, el pimentón, cebollín, ajo, ajoporro y las alcaparras, todo picado en cuadritos.
We put onoted oil in a large frying pan and when it is hot we add the onions, sweet peppers, the red pepper, chives, garlic, garlic porro and the capers, all diced.
Sofreímos a fuego bajo y cuando estén listos, añadimos el atún y lo revolvemos bien.
Stir-fry over low heat and when they are ready, add the tuna and stir it well.
Al quitarlo del fuego le añadimos por encima el cilantro fresco bien picadito.
When removing it from the heat, add the finely chopped fresh coriander on top.
Ya tenemos nuestro relleno listo, ahora vamos a proceder a picar las tajadas de plátanos para freírlas.
We already have our filling ready, now we are going to proceed to chop the plantain slices to fry them.
Vamos ahora a armar nuestro pastel por capas. Colocamos en el fondo del molde enmantequillado tajadas de plátano tratando de cubrir bien el espacio, si es necesario los aplastamos un poco.
We are now going to assemble our pie in layers. We place plantain slices at the bottom of the buttered mold, trying to cover the space well, if necessary, squash them a little.
Luego echamos la mezcla de dos huevos que previamente hemos batido de esta manera: primero las claras hasta que tengan espuma y después agregamos las yemas.
Then we add the mixture of two eggs that we have previously beaten in this way: first the whites until they have foam and then we add the yolks.
Seguidamente esparcimos 100 gr de pan rallado, luego el guiso de atún, sobre este el melado de papelón (el cual hemos preparado derritiendo una panela de papelón de 500 gr en 200 ml de agua) y 125 gr de queso blanco duro rallado.
Next, we spread 100 g of breadcrumbs, then the tuna stew, on top of it the sugar cane honey (which we have prepared by melting a 500 gr papelon panela in 200 ml of water) and 125 g of grated hard white cheese.
Estos pasos del armado los repetimos para tener nuestra segunda capa del pastel y así queda:
We repeat these steps of the assembly to have our second layer of the pie and it looks like this:
Lo metemos en el horno por unos 20 minutos y lo sacamos cuando esté gratinado.
We put it in the oven for about 20 minutes and take it out when it is gratin.
Como aún me queda sangría de las fiestas de Navidad y fin de año, acompañé mi pastel de atún y plátanos con esta refrescante bebida.
As I still have sangria left over from the Christmas and New Years holidays, I accompanied my tuna and plantain pie with this refreshing drink.
