Today was one of those days when everything is done in a hurry; we are my wife @patriciamor at home alone without our baby, he is in daycare. So we decided to make this baked chicken, the main seasoning was mustard accompanied by a potato salad, egg and parsley, a simple dish, quick for two.

Hoy fue uno de esos días en los que todo se hace de prisa; estamos mi esposa @patriciamor en casa solos sin nuestro bebé, él se encuentra en la guardería. Por eso decidimos hacer este pollo al horno, el sazonador principal fue la mostaza acompañado de una ensalada de papa, huevo y perejil, un plato sencillo, rápido para dos.

I usually start my recipes with the chicken. I marinate it only half an hour before putting it in the oven. I used thighs, since it is my wife's favorite piece. I added: mustard, curry, marinade, pepper and crushed garlic. At the same time my marinade rested, I let my oven heat up. After half an hour, I took it to the oven at 280 C°, it was cooking for 40 minutes.

Normalmente, empiezo mis recetas con el pollo. Lo marine solo media hora antes de colocarlo en el horno. Usé muslos, ya que es la pieza favorita de mi esposa. Le agregue: mostaza, curry, adobo, pimienta y ajo triturado. Al mismo tiempo que mi marinado reposaba, dejé que mi horno calentara. Al transcurrir media hora, lo llevé al horno a 280 C°, estuvo cocinandose por 40 minutos.

While my chicken was in the oven, I removed and chopped my yellow potatoes into 2cm squares. Some people boil the potato whole, then remove the skin and cut it but I like to do it this way. I added to a pot that I put to heat previously, I introduced 3 eggs so that both were sanchoraran. I removed the potato after 7 minutes, I didn't want it to be completely soft. I left the eggs for 5 minutes more.

Mientras mi pollo se encontraba en el horno, retiré y pique mi papas amarillas en cuadros de 2cm. Hay personas que sancochan la papa entera, luego de hervida le retiran la cascara y cortan pero me gusta hacerla de este modo. Agregue a una olla que puse a calentar previamente, introduje 3 huevos para que ambos se sanchoraran. Saque la papa a los 7 minutos, no quería que quedara totalmente ablandada. Los huevos los deje 5min más

Hice una preparación aparte con margarina, perejil picado, sal, pimienta y ajo. Al estar lista la agregue en un mismo bowl junto las papas previamente sancochadas, aprovechando aun el calor para que esta se derritiera

I took out my hard boiled eggs, removed the shell and chopped them in equal squares to the potato, added them to the potatoes, added a pinch of salt to my taste and stirred well so that all the ingredients were integrated. The salad was ready.

Saqué mis huevos ya duros, retire la cáscara y pique en cuadros iguales a la papa, lo agregue a las papas, le coloque un punto de sal a mi gusto y movi bien para que todos los ingredientes se integraran. Ya la ensalada estaba lista.

After exactly 40 minutes, I took my chicken out of the oven. I served on the plate some salad, a chicken thigh and accompanied with arepitas that were left over from the morning breakfast. My lunch was ready! If you like you can serve it with whatever you want; plantain, avocado, bread or cassava. Besides being easy, it is very nutritious and quick to make and convenient for 2 people. A los 40 minutos exactos, saqué mi pollo del horno. Serví en el plato un poco de ensalada, un muslo de pollo y acompañe con arepitas que habían quedado de la mañana del desayuno. ¡Listo mi almuerzo! Si gustas puedes acompañar con lo que desees; plátano, aguacate, pan o casabe. Aparte de ser fácil, es muy nutritivo y rápido de hacer y conveniente para 2 personas.
