Please raise your glasses and prepare for a sample of “Green Champagne”.I chuckled a bit as I called the name of this smoothie. I don’t make smoothies often enough but when I do, I put a bit of greens to get the kids to have them without “seeing them”. Usually the taste is more on the fruity side so they usually find it quite unbelievable that it contains greens and don’t mind having a second cup. This time in particular, I misjudged the greens against the color of the the other ingredients. Though a fruity flavor, the smoothie was fully green and was a total giveaway to the greens I had put in it. This was going against my “secret agenda”. I had to find a way to fix it. I decided to pop out some champagne glasses I hadn’t used in ages, make fruit garnishes and present it to the kids in a new way. Green Champagne it was.

3-Ingredient Smoothie

A cup of baby leaves

For this smoothie I used three main ingredients. I used a medium sized mango, a cup of baby leaves and 200g of vanilla yogurt. I also added a cup of ice cubes to make the smoothie more refreshing. Had I used frozen mangoes, I would have eliminated the ice-cubes.

Method and Equipment

A knife, cutting board, strainer or colander (for washing baby leaves) and a blender are needed for preparing the smoothie.

  1. Wash, peel and cut mango into slices.

  2. Wash baby leaves.(wash in a strainer)

  3. To the blender, add the yogurt, slices of mango, cup of baby leaves and cup of ice.

  4. Blend until the ingredients come to a smooth mixture.

  5. Garnish glasses with small slices of mango. Put a slit in each slice so that the mango sits on the glasses.

  6. Pour the smoothie in the glasses and serve.

Mango slices. Use a few pieces for garnishing. I had to cut a few pieces from a second mango because garnishing “Green Champagne” glasses was a consequent plan.

The smoothie was very delicious. One of my sons did not like the yogurt. The other enjoyed it so much that he wanted another glass. The green vegetables weren’t an issue.
