Remember the Roasted Cherry Tomatoes I shared with you in my last post? Well, I had the intention of preparing a focaccia to taste them as they should, however, today impatience won me over, and is that focaccia is delicious, but although it requires little work, it takes some time to get the desired consistency for the dough to be perfect, and the truth is that I did not want to wait so long for it, so I decided to prepare some breads with a little roasted tomatoes, some herbs and some mozzarella cheese, the result was totally delicious, soft, fluffy and super aromatic.
With a delicious aroma of pizza that permeated my house all afternoon, these breads, as my Mathias said, only needed a little ham and pepperoni to be so. At first I thought my son would not even want to try them, but when he smelled the pizza smell he immediately wanted to eat not one but two, I must say that they are more delicious when they are cold than fresh out of the oven, which usually the breads are delicious at this point. To accompany a lasagna or a good pasta with meat sauce they are great, to eat them alone with a little ham and cheese they are also very good, it has sweet, salty notes and lots of herbal flavor, to tell the truth, the mozzarella cheese does not feel as it should, I probably should have added more, however, it adds moisture to the dough which makes it quite fluffy.
This recipe is quite easy to prepare and although it has a long list of ingredients, they are not difficult to obtain and I assure you that you will love the result. We can substitute the roasted cherry tomatoes with regular roasted tomatoes, I am sure the result will be just as good and delicious. Join me and I'll show you how to prepare them.
To begin we will make the pre-ferment, in a container, preferably with a hermetic lid, add approximately half of the warm water and half of the sugar, the dry yeast and about 3 tablespoons of wheat flour, stir well and let stand for about 15 minutes.
Once the pre-ferment is ready, prepare the wheat flour that we have already sifted, add half of the sugar, the herbs and salt and mix everything very well, form a volcano in the mixer bowl and add the pre-ferment.
Continue adding the olive oil and begin to knead at medium low speed if we do it in a mixer, as we integrate the dough we add the roasted tomatoes that we have cut a little to reduce its size. Once the tomatoes are integrated and a ball of dough is formed, we move to a counter and open the dough to add the mozzarella cheese. Continue kneading until you obtain a smooth dough that does not stick to your fingers. Let it rest covered for an hour or until it doubles in size.
Once the leavening time has passed, we proceed to cut the dough portions to form the loaves, I made them of 90 gr each, we shape them and take them to a tray with a little olive oil on the bottom, cover and let them rest for another 30 minutes. After this time, brush with beaten egg and take to a preheated oven at 180 °C for approximately 25 minutes.
I gave them a second brushing with egg about 5 minutes before taking them out of the oven to make them more golden brown, they were perfect with this cooking time, now, if it is a larger size bread, for example, if you want to make it in a pudding mold to get a loaf, you should leave it in the oven for at least 45 to 50 minutes.
As I mentioned at the beginning, the house was impregnated with the smell of pizza, and these breads have a very similar taste to pizza, I did not like the combination with coffee, so I would prefer them in a breakfast with a good ham and some melted mozzarella cheese, remember, it is never too much cheese!

¿Recuerdan los Tomates Cherry Asados que les compartí en mi última publicación? Pues tenía la intención de preparar una focaccia para degustarlos como se debe, sin embargo, hoy la impaciencia me gano, y es que la focaccia es deliciosa, pero aunque requiere de poco trabajo, lleva algo de tiempo obtener la consistencia deseada para que la masa nos quede perfecta, y la verdad es que no quería esperar tanto para ello, así que decidí preparar unos panes con un poco de tomates asados, algunas hierbas y algo de queso mozarela, el resultado fue totalmente delicioso, suaves, esponjosos y super aromáticos.
Con un delicioso aroma a pizza que impregno toda la tarde mi casa, estos panes como dijo mi Mathias, solo le hacía falta un poco de jamón y pepperoni para serlo. En un principio pensé que mi hijo no querría probarlos tan siquiera, pero al percibir el olor a pizza de inmediato quiso comerse no uno sino dos, debo decir que son más deliciosos cuando están fríos que recién salidos del horno, que por lo general los panes son deliciosos en este punto. Para acompañar una lasaña o una buena pasta con salsa de carne son geniales, para comerlos solos con un poco de jamón y queso también son buenísimos, tiene notas dulces, saladas y mucho sabor a hierbas, a decir verdad, el queso mozarela no se siente como debería, probablemente debí agregarle más, sin embargo, le aporta una humedad a la masa lo cual la hace bastante esponjosa.
Una receta bastante fácil de elaborar y aunque vean una larga lista de ingredientes, no son difíciles de conseguir y les aseguro que les encantara el resultado. Podemos sustituir los tomates Cherry asados con tomates asados de los normales, estoy segura de que el resultado será igual de bueno y delicioso. Acompáñame y te muestro como los prepare.
Para comenzar haremos el pre fermento, en un envase, preferiblemente con tapa hermética, agregamos aproximadamente la mitad del agua tibia y la mitad del azúcar, la levadura seca y unas 3 cucharadas de harina de trigo, revolvemos bien y dejamos reposar por unos 15 minutos.
Una vez listo el pre fermento, preparamos la harina de trigo que ya hemos tamizado, agregamos la mitad del azúcar, las hierbas y la sal y mezclamos todo muy bien, formamos un volcán en el tazón de la batidora y agregamos el pre fermento
Continuamos agregando el aceite de oliva y comenzamos a amasar a velocidad media baja si lo hacemos en batidora, a medida que vamos integrando la masa vamos añadiendo los tomates asados que hemos cortado un poco para reducir su tamaño. Una vez integrados los tomates y formada una bola de masa, pasamos a una mesada y abrimos la masa para adicionar el queso mozarela. Continuamos amasando hasta obtener una masa suave que no se pegue a los dedos. Dejamos reposar tapada por una hora o hasta que doble su tamaño.
Una vez pasado el tiempo de leudado, procedemos a cortar las porciones de masa para formar los panes, yo los hice de 90 gr cada uno, le damos forma y llevamos a una bandeja con un poco de aceite de oliva en el fondo, tapamos y dejamos reposar otros 30 minutos. Pasado este tiempo pincelamos con huevo batido y llevamos a un horno pre calentado a 180 °C por aproximadamente 25 minutos.
Les di una segunda pincelada con huevo unos 5 minutos antes de sacarlos del horno para que quedaran más dorados, quedaron perfectos con este tiempo de cocción, ahora bien, si se trata de un pan de mayor tamaño, por ejemplo, si deseas hacerlo en un molde de budín para que quede un pan de molde, deberás dejarlo en el horno unos 45 a 50 minutos como mínimo.
Como les comenté al principio, la casa estaba impregnada con olor a pizza, y es que estos panes tienen un sabor muy similar a la pizza, no me gusto la combinación con el café, por lo que los preferiría en un desayuno con un buen jamón y algo de queso mozarela derretido, recuerda, ¡Nunca es demasiado queso!
