One Jar Meatfree Monday
Yes, it's about food after yesterday's more reflective post.
Remember the Moroccan butternut and lentil salad in a jar from Saturday's market?
Not all sold and one jar became Monday's meatfree supper. It's not a hardship because it's a dish we both really enjoy. As I said before, and where (folk have been asking - thank you - especially to @deswigke for the glass of wine!) you will find the recipe.
I prepared the entire meal from that jar. Not a pot dirtied:
After taking it out of the fridge to reach room temperature, I emptied the salad (500g) into a serving bowl and fluffed it out.
As an aside, and because The Husband has a very healthy appetite - he eats for two and it doesn't show, I served this with couscous. It works well, but actually works equall well on its own.
For the couscous, I boiled a kettle and put a cup of quick cooking couscous into the jar with a little salt and then added a cup of boiling water. I loosened the grains to be sure that the water was distributed and popped the lid back on. After 5 - 10 minutes, I took off the lid, added some olive oil, fluffed up the couscous to separate it. Then I stirred the oil through before turning it on to a plate. With hindsight, I could have grated lemon zest and chopped some fresh cilantro into that, but plain was fine.
There you have it: one meal for two. All prepared from a single mayo jar.
About jars
Although I have a cupboard full of Mr Tupper's ware, a while ago, I decided to move away from single use plastic at the market. Also, if the products go into hot, sterilised jars, hot, one is effectively canning them which also extends their shelf life. Even if not hot, in my experience, the food stores just as well, if not better. In glass.
However don't freeze glass...

I totally agree with you about glass, and to think we were all crazy about Tupperware, even had Tupperware parties! One thing though, they did have some good recipes.
This salad of yours is on my list and I've printed the recipe out to make, looks really good!
I have the recipe book! Actually, I need to revisit it. I also have Tupperware that my mother bought in the early 70s. A school friend's mom used to sell it. They live in De Rust now. Truthfully, I still like it for its quality and there are containers I use all the time. And it's essential for freezing stocks and leftovers. I have to find an agent to exercise that lifetime guarantee! Oh, and one of my big bowls is reserved for making rolls and bread...lol
